Abstract

Seiring dengan perkembangan zaman, café telah menjadi bagian dari lifestyle masyarakat yang sangat berpengaruh bagi perkembangan bisnis kafe di Indonesia. Pelaku bisnis baru mulai bermunculan dan persaingan bisnis pun menjadi ketat yang menyebabkan kafe kesulitan bersaing, tingkat kunjungan menurun yang secara langsung mempengaruhi penurunan omzet penjualan. Pelaku bisnis perlu mempertimbangkan kembali strategi untuk menghadapinya. Marketing mix (7P);Product, price, promotion, Place, People, Physical Evidence dan Process merupakan penyempurnaan dari bauran pemasaran tradisional yang dapat dipakai untuk mengatur dan menyusun strategi dalam menghadapi persaingan. Penelitian ini bertujuan untuk menganalisa pengaruh dari product, price, promotion, place, people, dan physical evidence terhadap tingkat kunjungan. Penelitian ini dilakukan dengan menyebarkan kuesioner kepada 200 responden konsumen yang pernah berkunjung ke kafe Coffee Alley melalui google form. Alat analisa yang digunakan adalah Partial Least Square Structural Modeling (PLS-SEM) yaitu SMART PLS 3.0. Hasil penelitian ini menunjukkan bahwa hanya 4 variabel yang berpengaruh signifikan terhadap tingkat kunjungan Coffee Alley yaitu; price, promotion, place, dan physical evidence. Sedangkan faktor yang paling berpengaruh terhadap tingkat kunjungan di Coffee Alley adalah place.
