Abstract
Negara Indonesia memiliki bahan pangan yang melimpah salah satunya adalah umbi- umbian. Namun karena pemanfaatan dari umbi-umbian tersebut belum cukup maksimal, akhirnya banyak umbi-umbian yang harus terbuang. Umbi-umbian sendiri adalah bahan yang cukup serbaguna sehingga dapat dikreaiskan menjadi resep menarik. Oleh karena itu, penulis membuat rancangan buku resep mochi yang terbuat dari bahan umbi-umbian untuk meningkatkan pemanfaatan terhadap berbagai macam umbi. Karena ketertarikan masyarakat Indonesia akan kue mochi yang cukup besar, penulis memutuskan untuk memilih kue mochi untuk dijadikan kreasi dari berbagai macam variasi olahan umbi-umbian di dalam bukuresep ini. / Indonesia as a country has abundant of food ingredients, one of which is tubers. However, because of the utilization of these tubers has not been maximized, many tubers have to be wasted. Tubers are also a versatile ingredient that could be utilized for interesting recipe. Therefore, the author made a mochi recipe book made from variety kinds of tubersto increase the utilization of tubers. Due to the high interest of the Indonesian people for mochi, the author decided to choose mochi to be creations created from various kinds of tubers in this recipe book.
