Abstract

Hotel Istana Nelayan merupakan salah satu hotel berbintang 3 yang terletak di Kota Tangerang, Banten. Hotel Istana Nelayan memiliki restoran dengan beragam varian menu yang terdapat pada menu ala carte Krakatau Resto dan Coffe Shop. Tujuan dari laporan magang ini adalah untuk meninjau penerapan analisis menuengineering dalam meningkatkan volume penjualan di Hotel Istana. Laporan magang menggunakan pendekatan kualitatif dengan menggunakan analisis deskriptif dengan pendekatan metode analisa menu engineering. Analisis ini menggunakan metode analisis indeks popularitas da margin kontribusi. Hasil analisis menunjukan bahwa terdapat 4 jenis klasifikasi menu yakni 8 menu Star, 5 menu Plowhorse, 4 menu Puzzledan 2 menu Dog. / Hotel Istana Nelayan is a 3-star hotel located in Tangerang City, Banten. Hotel Istana Nelayan has a restaurant with a variety of menu variants on the ala cartemenu of Krakatau Resto and Coffee Shop. The purpose of this internship report is to review the application of menu engineering analysis in increasing sales volume at the Istana Nelayan Hotel. The internship report uses a qualitative approach using descriptive analysis with the menu engineering analysis method. This analysis uses the popularity index and contribution margin method. The result of the analysis showed that the ala carte menu are have 4 types of clasifications scilicet 8 Star, 5 Plowhorse, 4 Puzzle and2 Dog.
