Abstract

Laporan seminar hasil ini adalah hasil presentasi dari rancangan buku resep yang telah dilakukan oleh peneliti, dengan judul “Pizza Kentang Dieng Dengan 15 Varian Rasa Indonesia”. Tujuan dari rancangan buku resep ini adalah: (1) untuk mempopulerkan masakan khas Indonesia yang memiliki cita rasa yang unik, (2) untuk membuat kreasi dari produk makanan yang memiliki tradisi dan berasal daridua negara yang berbeda, (3) memberikan peluang untuk membuka usaha baru di bidang kuliner melalui rancangan buku resep ini. Rancangan buku resep ini dilakukan dengan metode buku literatur. Hasil yang didapat dari rancangan buku resep ini adalah (1) penambahan kentang sendiri memiliki manfaat yaitu untuk membuat adonan pizza mengembang lebih cepat, menambahkan rasa manis pada adonan pizza, dan membuat adonan pizza lebih empuk, (2) penambahan topping pada pizza dengan cita rasa Indonesia yang tidak kalah enak dengan cita rasa luar negeri seperti pizza pada umumnya. Seminar hasil rancangan buku resep ini adalah langkah terakhir sebelum dilaksanakannya sidang tugas akhir yang dimana yang akan menjadi dosen penguji akan melihat hasil dari rancangan buku resep dan melakukan review dan meminta penyesuaian dalam beberapa bagian pada rancangan buku resep yang dilakukan oleh penulis. Pada pelaksanaan kegiatan seminar hasil rancangan buku resep ini, terdapat total sebanyak 9 anggota, dimana 3 orang yang menjadi dosen reviewer, 3 orang adalah mahasiswa peserta dan pembawa materi seminar, 1 orang adalah sekretaris dan 2 orang lagi menjadi Person In Charge (PIC). Rangkaian kegiatan seminar hasil rancangan buku resep ini terdiri dari 3 bagian meliputi pembukaan yang sudah termasuk persiapan materi-materi yang akan disampaikan dan juga kata sambutan, dilanjutkan dengan pembawaan materi yang dilaksanakan oleh mahasiswa peserta seminar hasil, dan kritik serta saran dari dosen reviewer yang termasuk menjadi bagian dari pelaksanaan acara, dan terakhir adalah penutupan. Kritik dan saran yang diperoleh yaitu (1) memperkuat latar belakang penggunaan kentang Dieng sebagai salah satu bahan dasar pembuatan pizza, (2) memperhatikan penulisan dan penggunaan huruf kapital pada keseluruhan laporan. Dari kritik dan saran yang diperoleh dari dosen reviewer, penulis akan melakukan revisi dan perbaikan sehingga akhirnya akan melaksanakan sidang tugas akhir. / This seminar report is the result of the presentation of the recipe book design that has been done by the researcher, with the title "Dieng Potato Pizza with 15 Indonesian Flavor Variants". The aims of this recipe book are: (1) to popularize Indonesian specialties that have a unique taste, (2) to create creations from food products that have traditions and come from two different countries, (3) provide opportunities to open a new venture in the culinary field through the design of this recipe book. The design of this recipe book was carried out using the literature book method. The results obtained from the design of this recipe book are (1) the addition of potatoes itself has benefits, namely to make the pizza dough rise faster, add sweetness to the pizza dough, and make the pizza dough softer, (2) the addition of toppings on pizza with flavor Indonesia is no less delicious with foreign flavors such as pizza in general. This recipe book design seminar is the last step before the final task session is held where the examiner lecturer will see the results of the recipe book design and review and ask for adjustments in several parts of the recipe book design carried out by the writter. In the implementation of the seminar activity as a result of this recipe book design, there were a total of 9members, of which 3 people became lecturer reviewers, 3 peoplewere student participants and presenters of seminar material, 1 person was a secretary and 2 others became Person In Charge (PIC). The series of seminar activities resulting from this recipe book design consists of 3 parts including the opening which includes the preparation of the materials to be delivered and also the opening remarks, followed by the presentation of material carried out by students participating in the seminar results, and criticism and suggestions from reviewer lecturers including be part of the implementation of the event, and the last is the closing. The criticisms and suggestions obtained were (1) strengthening the background of using Dieng potatoes as one of the basic ingredients for making pizza, (2) paying attention to the writing and use of capital letters in the entire report.From the criticisms and suggestions obtained from the reviewer lecturers, the recipe book design team will make revisions and improvements so that they will finally carry out the final trial
