Abstract

Tanaman bunga matahari (Helianthus annuus L.) dapat dimanfaatkan bijinya dikarenakan sangat baik untuk kesehatan tubuh, lalu dapat menurunkan Low Density Lipoprotein (LDL) yang berisko terhadap penyakit jantung. Parameter mutu minyak biji bunga matahari dapat mengacu pada standar CODEX, antara lain bilangan peroksida, kadar asam lemak bebas, komposisi asam lemak (asam oleat), tokoferol (alpha-tokoferol), bilangan iodin, dan unsaponifiable matter. Metode ekstraksi pada minyak biji bunga matahari bervariasi, yaitu, ethanol solvent extraction, pressing extraction, pulsed electric field, cold pressed, serta supercritical CO2 dan subcritical propane. Perlunya mengetahui variasi ekstraksi minyak biji bunga matahari, sebab dari metode yang berbeda akan memiliki proses ekstraksi yang berbeda. Hasil pengujian parameter mutu minyak biji bunga matahari, dapat dilihat dari metode ekstraksi yang digunakan pada tinjauan ini bahwa metode ethanol solvent extraction, supercritical CO2, dan subcritical propane tidak dilakukan pengujian terhadap parameter bilangan peroksida, sehingga tidak diketahui. Pada tinjauan ini semua metode yang ditinjau memenuhi best practice industri minyak goreng nabati. Hal tersebut menyimpulkan bahwa metode ekstraksi minyak biji bunga matahari yang telah ditinjau termasuk dalam minyak nabati yang memiliki kandungan lemak tidak jenuh untuk kesehatan manusia. Standar mutu minyak biji bunga matahari meliputi dari persentase asam lemak bebas, nilai bilangan peroksida, dan persentase asam oleat, serta untuk mengetahui efektifitas ekstraksi dilakukan penghitungan persentase rendemen minyak biji bunga matahari. Metode ekstraksi yang memenuhi standar mutu minyak biji bunga matahari adalah ekstraksi dengan petroleum eter karena memenuhi standar mutu yang ditetapkan. / Sunflower plants (Helianthus annuus L.) can be used for seeds because they are very good for body health, and can reduce Low Density Lipoprotein (LDL) which is at risk for heart disease. The quality parameters of sunflower seed oil can refer to the CODEX standard, including peroxide number, free fatty acid value, fatty acid composition (oleic acid), tocopherol (alpha-tocopherol), iodin value, and saponification number. The use of various extraction methods for sunflower seed oil, namely, ethanol solvent extraction, pressing extraction, pulsed electric field, cold pressed, and supercritical CO2 and subcritical propane. It is necessary to know the variation of sunflower seed oil extraction, because different methods will have different extraction processes. The results of testing the quality parameters of sunflower seed oil, it can be seen from the extraction method used in this review that the ethanol solvent extraction, supercritical CO2, and subcritical propane methods were not tested on the peroxide number parameter, so it is not known. In this review, all the methods reviewed meet the best practice of the vegetable cooking oil industry. It concludes that the sunflower seed oil extraction method that has been reviewed is included in vegetable oils that contain unsaturated fats for human health. Quality standards of sunflower seed oil include the percentage of free fatty acids, peroxide value, and the percentage of oleic acid, and to determine the effectiveness of extraction, the percentage yield of sunflower seed oil is calculated. The extraction method that meets the quality standards of sunflower seed oil is extraction with petroleum ether because it meets the specified quality standards.
