Abstract

Setelah penelitian dengan judul “Seminar Hasil Pengaruh Persepsi Konsumen pada Kualitas Makanan, Pelayanan, Physical Environment, Harga, Rapidity, dan Nilai Konsumen terhadap Minat Pembelian Kembali Street Food di Kawasan Pasar Lama, Tangerang” selesai dilakukan, peneliti melakukan diseminasi melalui seminar hasil yang dilaksanakan pada tanggal 7 Juni 2022 dalam acara Hospitour. Penelitian ini dilakukan dikarenakan industri jasa penyediaan makanan dan minuman terus berkembang di indonesia dengan tujuan untuk mengetahui pengaruh kualitas makanan, kualitas pelayanan, physical environment, harga, dan rapidity terhadap nilai utilitarian dan nilai hedonis yang pada akhirnya berdampak pada minat pembelian kembali konsumen pada vendor street food di Kawasan Pasar Lama Tangerang. Penelitian ini menggunakan metode kuantitatif dengan cara penyebaran kuesioner kepada 160 responden yang kemudian akan diolah dengan menggunakan perangkat lunak SMART-PLS. Hasil penelitian ini menunjukan bahwa physical environment, harga, dan rapidity memiliki hubugan yang signifikan terhadap nilai utilitarian. Sedangkan untuk nilai hedonis, faktor yang berpengaruh secara signifikan dengannya adalah kualitas makanan, kualitas pelayanan, dan rapidity. Lalu, nilai utilitarian dan nilai hedonis berhubungan secara signifikan dengan minat pembelian kembali. Setelah hasil penelitian dibagikan oleh peneliti, peneliti mendaatkan beberapa masukan untuk meningkatkan kualitas dari penelitian ini./ After the research with the title "Seminar Hasil Pengaruh Persepsi Konsumen pada Kualitas Makanan, Pelayanan, Physical Environment, Harga, Rapidity, dan Nilai Konsumen terhadap Minat Pembelian Kembali Street Food di Kawasan Pasar Lama, Tangerang" was completed, the researchers conducted dissemination through a seminar on the results which was held on June 7, 2022, in the Hospitour event. This research was conducted because the food and beverage service industry continues to develop in Indonesia with the aim of knowing the effect of food quality, service quality, physical environment, price, and rapidity on utilitarian and hedonic values, which ultimately have an impact on consumer repurchase interest at street food vendors in Pasar Lama Tangerang. This study uses quantitative methods by distributing questionnaires to 160 respondents, which will then be processed using SMART-PLS software. The results of this study indicate that the physical environment, price, and rapidity have a significant relationship with utilitarian values. As for the hedonic value, the factors that significantly influence it are food quality, service quality, and rapidity. Then, utilitarian value and hedonic value are significantly affected to repurchase intention. After the research results were shared by the researcher, the researcher got some inputs to improve the quality of this research.
