Abstract

Indonesia merupakan salah satu negara penghasil kelapa terbesar dan memasuki jajaran-jajaran negara penghasil kelapa terbesar. Pohon kelapa merupakan tanaman yang sangat bermanfaat. Seluruh bagian yang terdapat di dalam pohon kelapa dapat dimanfaatkan, akan tetapi dalam pemanfaatan daging kelapa menyisakan banyak sekali limbah ampas kelapa, yang saat ini kurang dimanfaatkan dan hanya dimanfaatkan sebagai pakan untuk ternak. Industri makanan dan minuman merupakan salah satu sektor pendukung industri pariwisata yang kontribusinya sangat baik bagi Indonesia dan membawa dampak positif yang luas untuk perekonomian nasional. Tingginya angka permintaan, serta minat masyarakat pada makanan dan minuman, memicu para pebisnis kuliner terus berinovasi, agar dapat bertahan dan bersaing di antara pebisnis kuliner. Inovasi produk makanan dapat dilakukan untuk bermacam-macam tujuan, misalnya dengan memanfaatkan food waste, sebagai contoh adalah pemanfaatan food waste dari sisa ampas kelapa ini. Cake and bakery adalah salah satu kuliner yang sangat diminati, khususnya oleh konsumen Indonesia. Bisnis kuliner di bidang pastry telah menjadi bisnis yang banyak diminati oleh pengusaha dan juga calon pengusaha. Hal ini terjadi dikarenakan bisnis di bidang pastry merupakan salah satu bisnis yang sangat menjanjikan serta mudah dipasarkan dan dijual. Salah satu produk cake yang banyak digemari orang-orang adalah brownies. Brownies biasanya terbuat dari tepung terigu, namun tentu tepung terigu ini bisa disubstitusikan dengan tepung lain seperti tepung ampas kelapa, dengan harapan sisa ampas kelapa ini dapat lebih bermanfaat bagi masyarakat karena memiliki nilai ekonomis yang tinggi, dan membantu mengurangi ketergantungan impor gandum. KATA KUNCI : Food Waste; Brownies; Tepung Ampas Kelapa / Indonesia is one of the largest coconut producing countries and enters the ranks of the largest coconut producing countries. Coconut palm is a very useful plant. All parts contained in the coconut tree can be used, but in the use of coconut meat leaves a lot of coconut pulp waste, which is currently underutilized and only used as feed for livestock. The food and beverage industry is one of the supporting sectors of the tourism industry whose contribution is very good for Indonesia and brings a broad positive impact to the national economy. The high demand, as well as public interest in food and beverages, triggered culinary business people to continue to innovate, in order to survive and compete among culinary business people. Food product innovation can be done for various purposes, for example by utilizing food waste, as an example is the use of food waste from the remaining coconut pulp. Cake and bakery is one of the culinary that is in great demand, especially by Indonesian consumers. The culinary business in the field of pastry has become a business that is in great demand by entrepreneurs and also aspiring entrepreneurs. This happens because the business in the pastry sector is one of the most promising businesses and is easy to market and sell. One of the cake products that many people love is grilled brownies. Brownies are usually made from wheat flour, but of course this wheat flour can be substituted with other flours such as coconut pulp flour, with the hope that the remaining coconut pulp can be more beneficial to the community because it has high economic value, and help reduce dependence on wheat imports.
