Abstract

Tujuan dari penelitian ini adalah untuk membuat inovasi saripati bayam dalam pembuatan Mie Aceh, Roti Canai, dan Roti Jala yang merupakan masakan khas Aceh. Dengan menggunakan metode uji organoleptik dengan 4 indikator yaitu; tekstur, warna, aroma, dan rasa. Hasil uji organoleptik dari uji hedonik produk disukai dan uji mutu hedonik produk dikatakan berkualitas baik dalam penilaian panelis terbatas maupun panelis konsumen. Masyarakat akan mendapat pengetahuan baru tentang bagaimana pemanfaatan sari bayam dalam pengolahan Mie Aceh, Roti Canai, dan Roti Jala. Sehingga penelitian ini dapat menjadi inspirasi bagi penelitian selanjutnya. Kata kunci: saripati bayam, Roti Canai, Roti Jala, Mie Aceh, uji organoleptik / The purpose of this research is to innovate spinach extract in making Acehnese noodles, canai bread, and jala bread which are Acehnese specialties. By using the organoleptic test method with 4 indicators namely; texture, color, aroma, and taste. The organoleptic test results from the hedonic test of the preferred product and the hedonic quality test of the product were said to be of good quality in the assessment of limited panelists and consumer panelists. The community will gain new knowledge about how to use spinach extract in the processing of Acehnese noodles, canai bread and jala bread.
