Abstract

Susu kental manis atau dapat disingkat SKM merupakan produk susu cair yang memiliki tekstur kental dengan menghilangkan sebagian air dari campuran susu dan gula. Proses pengolahan dengan meningkatkan kandungan gula dan menghilangkan sebagian besar protein serta lemak dari susu ini membuat produk SKM mengandung gizi yang rendah dan tinggi gula. Selain itu, berdasarkan bahan baku susu kental manis, di Indonesia sendiri umumnya terbuat dari susu sapi yang merupakan susu hewani. Sedangkan susu nabati seperti susu kelapa dan susu kedelai umumnya hanya diproduksi berupa susu cair. Oleh karena itu, peneliti ingin membuat produk susu kental manis yang terbuat dari susu nabati, seperti susu kelapa dan susu kedelai dengan madu sebagai bahan pemanis sehingga dapat menjadi produk susu kental manis baru dan dapat menambah variasi produk susu kental manis untuk dikonsumsi di indonesia. Penelitian ini bertujuan untuk mengedukasi masyarakat mengenai cara pembuatan susu kental manis olahan rumah dari susu kelapa dan susu kedelai serta untuk mengetahui tingkat penerimaan terhadap susu kental manis olahan rumah dari susu kelapa dan susu kedelai / Sweetened condensed milk or can be abbreviated as SKM is a liquid milk product that has a thick texture by removing some of the water from the milk and sugar mixture. The processing process by increasing the sugar content and removing most of the protein and fat from milk makes SKM products low in nutrition and high in sugar. In addition, based on the raw material for sweetened condensed milk, in Indonesia it is generally made from cow's milk which is animal milk. Whereas plant-based milk such as coconut milk and soy milk are generally only produced in the form of liquid milk. Therefore, researchers want to make sweetened condensed milk products made from plant-based milk, such as coconut milk and soy milk with honey as a sweetener so that they can become new sweetened condensed milk products and can add variety to sweetened condensed milk products for consumption in Indonesia. This study aims to educate the public about how to make home-processed sweetened condensed milk from coconut milk and soy milk and to determine the level of acceptance of home-processed sweetened condensed milk from coconut milk and soy milk.
