Abstract

Manado adalah sebuah kota yang terletak di Sulawesi Selatan yang memiliki kuliner yang luar biasa dengan kelezatan rasa yang luar biasa dari berbagai rempah-rempah dari Indonesia. Namun, masakan Manado banyak menggunakan bahan dasar non- halal, hal itu membuat masakan Manado tidak banyak dikenal. Dalam buku resep Authentic Manadonese Chicken Based Cuisine akan menjelaskan tentang cara memasak masakan authentic Manado dengan bahan dasar ayam. Metode yang digunakan dalam buku ini adalah metode penelitian produk. Data yang di diperoleh diambil dari uji hedonik dan juga kuesioner. Kesimpulan yang bisa di dapat adalah masakan authentic Manado bisa dimasak menggunakan bahan dasar ayam jika dimasak dengan cara yang tepat. / Manado is a city located in South Sulawesi which has extraordinary culinary delights with extraordinary flavors of various spices from Indonesia. However, Manado cuisine uses a lot of non-halal ingredients, which makes Manado cuisine not widely known. In the recipe book Authentic Manadonese Chicken Based Cuisine, we will explain how to cook authentic Manadonese dishes with chicken as a base. The method used in this book is the product research method. The data obtained was taken from the hedonic test and also a questionnaire. The conclusion that can be obtained is that authentic Manado cuisine can be cooked using chicken as a base if it is cooked in the right way.
