Abstract
Bacteriocin, a subgroup of antimicrobial peptides produced by various strains of bacteria, possess numerous functionalities within the food industry and are being considered as a promising alternative to traditional antibiotics. A previous in silico study on Lactiplantibacillus plantarum SU-KC1a has identified the gene encoding for plantaricin, a type of bacteriocin expressed by L. plantarum. However, experimental validation of its antimicrobial activity and an induction of plantaricin have yet been done. Therefore, this study aimed to assess the antimicrobial activity of L. plantarum SUKC-1a against Listeria monocytogenes ATCC-7644 and to induce the biosynthesis of plantaricin through co-culture with L. monocytogenes ATCC-7644 as the inducer strain. The results showed that the cell free supernatants from both co-culture and mono-culture of L. plantarum SU-KC1a exhibit antimicrobial activity against L. monocytogenes ATCC-7644. It was determined that the inhibitory effect was attributed to the production of organic acids, causing a decrease in pH. The induction of plantaricin through co-culture with L. monocytogenes ATCC-7644 had not been effectively achieved. This was mainly caused by L. monocytogenes ATCC-7644 being unable to effectively act as an environmental stimulus
