Abstract

Radikal bebas yang ada didalam tubuh akan reaktif dengan cara mengikat suatu molekul sel yang dimiliki oleh tubuh sehingga apabila reaksi tersebut terjadi secara berulang didalam tubuh akan menyebabkan penyakit. Antioksidan adalah suatu substansi yang mampu mencegah ataupun menghambat pada konsentrasi kecil suatu oksidasi yang disebabkan oleh radikal bebas. Dari proses ekstraksi Pada ekstrak nangka, dilaporkan bahwa sumber antioksidan terdapat pada senyawa flavonoid yang cukup tinggi. Penelitian ini bertujuan untuk mengetahui kandungan senyawa metabolit sekunder dan aktivitas antioksidan ekstrak metanol kulit buah nangka (A. Heterophyllus Lam). dengan metode DPPH yang dinyatakan dalam parameter IC50 (Inhibition concentration 50%). Simplisia kulit buah nangka di ekstrak menggunakan pelarut metanol dengan metode maserasi dan dilakukan skrining fitokimia dan dilanjutkan dengan uji aktivitas antioksidan menggunakan metode DPPH. Dari proses ekstraksi diperoleh rendamen sebesar 12,073%. Hasil skrining fitokimia ekstrak mengandung senyawa flavonoid, tannin, steroid, dan alkaloid. Hasil uji aktivitas antioksidan secara kuantitatif menunjukkan bahwa ekstrak methanol kulit buah nangka (A. heterophyllus Lam) memiliki nilai IC50 sebesar 70,975 ppm. Aktivitas antioksidan yang dimiliki masuk kedalam kategori sedang berdasarkan hasil yang diperoleh dengan menggunakan parameter / Free radicals that are in the body will be reactive by binding to a cell molecule that is owned by the body so that if the reaction occurs repeatedly in the body it will cause disease. An antioxidant is a substance that is capable of preventing or inhibiting at small concentrations an oxidation caused by free radicals. From the extraction process of jackfruit extract, it was reported that the antioxidant source was found in high levels of flavonoid compounds. This study aims to determine the content of secondary metabolites and the antioxidant activity of the methanol extract of jackfruit peel (A. heterophyllus Lam) using the DPPH method which is expressed in the parameter IC50 (50% inhibition concentration). Phytochemical screening was carried out and followed by antioxidant activity test using the DPPH method. From the extraction process a yield of 12.073 was obtained. The results of the phytochemical screening extract contained flavonoids, tannins, steroids, and alkaloids. The results of the quantitative antioxidant activity test showed that the methanol extract of jackfruit peel (A. heterophyllus Lam) has an IC50 value of 70.975 ppm. Its antioxidant activity is in the moderate category based on the results obtained using parameters.
