Abstract

Hawker Culture refers to Hawker Centers that are available at 110 locations all over Singapore. Hawker Culture can be described based on three elements which are people, place and food. People refers to the Hawkers who conduct culinary expertise that has been inherited from generation to generation alongside with the atmosphere at the establishment described as “common ground” where people from different backgrounds (such as religious and ethnicity) gather and shared common love toward food. The place reflects how Hawker Center evolves as Singapore re-invents itself to address global condition. The Food element refers to culinary dishes that are served at Hawker Center as a living heritage that showcase Singapore’s diverse multi-racial composition alongside their immigrant origins. Using a qualitative research approach and secondary data, this research finds that Hawker Culture provides a microscopic glance in the Singaporean society. Hawker Culture reflects Singapore national identity based on multiculturalism alongside with cultural combination between western and eastern that keep adapting the global condition. The UNESCO nomination of Hawker Culture can also be considered as Singapore’s attempt to create the sense of shared identity toward both Western and Asian countries to give diplomacy leverage alongside fulfilling other ambitions such as tourism, economic and become a role model of successful multicultural society in urban and global environment. Hawker Culture adalah habit/kebiasaan yang menjadi budaya yang berkaitan dengan keberadaan Hawker Center sebagai tempat penampungan/pusat berkumpulnya pedagang (KBBI: orang yang pergi berkeliling membawa dan menawarkan barang dagangan) yang tersedia di 110 lokasi di segala penjuru Singapura. Hawker Culture dibentuk atas tiga elemen yaitu masyarakat, tempat dan makanan. Yang dimaksud dengan “Masyarakat” adalah Penjaja/Penjual keliling yang mempunyai kemampuan kuliner yang diwariskan dari generasi ke generasi yang berdagang/berjualan dalam suatu area/tempat bersama bergabung dengan para penikmat makanan yang terdiri dari berbagai suku dan agama dimana keragaman tersebut tercermin dari makanan yang diperjual-belikan. Elemen “Tempat” adalah evolusi phisik tempat berkumpul yang terus berkembang beradaptasi seiring perkembangan global. Adapun yang dimaksud dengan elemen “makanan” adalah keragaman makanan yang disajikan yang melambangkan keragaman etnis di Singapura yang berkaitan dengan asal usul mereka sebagai imigran. Riset ini dilakukan mengunakan metode qualitative dengan mengumpulkan data sekunder. Hasil dari riset menunjukan bahwa Hawker Culture merefleksikan dinamika masyarakat Singapura dalam skala mikro. Hawker Culture juga merefleksikan identitas nasional Singapura yang berdasarkan multikulturisme dan merupakan perpaduan dari budaya Barat dan Timur yang selalu berkembang beradaptasi dengan keadaan global. Nominasi Hawker Culture dalam daftar UNESCO dapat dianggap sebagai upaya Singapura untuk menunjukkan identitas Singapore sebagai perpaduan budaya Asia dan pengaruh Barat yang diharapkan mendukung proses diplomasi mereka dan juga memenuhi tujuan lain seperti peningkatan pariwisata, peningkatan ekonomi dan menjadi panutan dalam menciptakan masyarakat multikultural.
