Abstract

Minyak kelapa mentah merupakan salah satu produk industri yang telah dikenal dan digunakan sebagai bahan baku bagi industri konsumsi masyarakat luas, salah satu contohnya adalah produksi minyak kelapa dan kosmetik. Sebagai produk yang luas digunakan oleh masyarakat, produk minyak kelapa mentah dituntut memenuhi standar kualitas yang telah ditetapkan oleh pemerintah. Oleh karena itu, isu kualitas menjadi perhatian utama dalam industri pengolahan minyak kelapa mentah ini. Penelitian dilakukan untuk meningkatkan kualitas minyak kelapa mentah pada lini produksi PT. Multi Nabati Sulawesi (Luwuk). Metode penelitian yang digunakan adalah desain eksperimen menggunakan Metode Taguchi dengan matriks orthogonal L18. Optimasi dilakukan untuk dua respon, yaitu kandungan kadar FFA (free fatty acid) dan kadar kandungan minyak pada bungkil (copex), kedua respon ini memiliki karakteristik kualitas smaller the better. Faktor-faktor yang diuji meliputi cara pengeringan dengan dua level faktor, lama penyimpanan, kandungan air bahan baku, kandungan minyak bahan baku, temperatur mesin pre press, temperatur mesin final press, ampere mesin pre press dan ampere mesin final press dengan masing￾masing tiga level faktor. Hasil yang diperoleh dari penelitian ini adalah setting yang paling optimal dari faktor-faktor tersebut, yaitu sebagai berikut: cara pengeringan sunrise (menggunakan sinar matahari), lama penyimpanan 0 bulan, kandungan air bahan baku 7%, kandungan minyak bahan baku 63%, temperatur mesin pre press 90o C, temperatur mesin final press 55o C, ampere mesin pre press 60A dan ampere mesin final press 40A. Penelitian ini dibatasi oleh faktor biaya, sehingga disarankan untuk penelitian selanjutnya memperhitungkan faktor biaya untuk mendapatkan taguchi loss function. / Crude coconut oil is one of the industrial products which have been known and used as raw material for public consumption industry, such as coconut oil and cosmetics. Since this products are widely used by the public, crude coconut oil products are required to meet quality standards set by the government. Therefore, the issue of quality becomes a major concern in the industrial processing of crude coconut oil. This study was conducted to improve the quality of crude coconut oil in PT. Multi Nabati Sulawesi (Luwuk). The method used is the design of experiments using the Taguchi method with L18 orthogonal matrix. Optimization is done for two responses, namely the content levels of FFA (free fatty acids) and the levels of oil content in copex (bungkil), and both of the responses have the characteristic quality of the smaller the better. Factors examined include drying method with two factor levels, length of storage, the moisture content of raw materials, oil content of raw materials, temperature of pre press machine, temperature of final press machine, ampere of pre press machine and ampere of final press machine with each have three factor levels. Results obtained from this study are the most optimal setting of these factors, as follows: drying sunrise (using sunlight), 0 months length of storage, moisture content of raw materials is 7%, oil content is 63%, temperature of pre press machine is 90o C, temperature of final press machine is 55o C, ampere of pre press machine is 60A and ampere of final press machine is 40A. The study is limited by cost factor, and therefore it is suggested to develop a more comprehensive work supporting by taguchi loss function.
