Abstract

Penelitian ini bertujuan untuk menguji dan menganalisa pengaruh Pelatihan Kerja, Pengalaman Kerja, dan Kompetensi terhadap kinerja karyawan dapur di Restoran Italia di Jakarta Selatan. Maka dari itu, peneliti ingin mengetahui berbagai faktor yang dapat mempengaruhi kinerja karyawan dapur di Restoran Italia Jakarta Selatan. Teknik pengambilan sampel pada penelitian ini diantaranya adalah non- probability sampling dimana penarikan sampel tidak bersifat acak dan ditujukan khusus untuk populasi secara khusus pada karyawan dapur Restoran Italia di Jakarta Selatan. Teknik penggambilan sampel ini secara bebas sesuai dengan kehendak peneliti. Penelitian ini mengambil sampel sebanyak 150 responden. Penyebaran kuisioner digunakan dalam teknik pengumpulan data penelitian ini. Sumber data yang digunakan dalam penelitian ini berasal dari data primer yang merupakan responden kuisioner dan data sekunder yang berasal dari artikel, jurnal, maupun buku. Analisis multivariat merupakan analisis data yang digunakan dalam penelitian ini. Pengujian hipotesis penelitian dilakukan dengan pendekatan Structural Equation Model (SEM) yang berbasis Partial Least Square (PLS). Hasil dalam penelitian ini menunjukkan bahwa: (1) Pelatihan Kerja berpengaruh positif terhadap Kinerja Karyawan, (2) Pengalaman Kerja berpengaruh positif terhadap Kinerja Karyawan, (3) Kompetensi berpengaruh positif terhadap kinerja karyawan. Kata Kunci: pelatihan, pengalaman, kompetensi, kinerja, karyawan / This research aims to test and analyze the influence of job training, work experience, and knowledge competency on the performance of kitchen employees at Italian restaurants in South Jakarta. Therefore, researchers want to know various factors that can influence the performance of kitchen employees at the Italian Restaurant in South Jakarta. The sampling technique in this research includes non- probability sampling, where sampling is not random and is aimed specifically at the population, specifically Italian restaurant kitchen employees in South Jakarta. This sampling technique is done freely according to the wishes of the researcher. The distribution of questionnaires was used in this research data collection technique and used a sample of 150 respondents. The data sources used in this research come from primary data, which are questionnaire respondents, and secondary data, which comes from articles, journals, and books. Multivariate analysis is the data analysis used in this research. Research hypothesis testing was carried out using a structural equation model (SEM) approach based on partial least squares (PLS). The results of this research show that: (1) job training has a positive effect on employee performance; (2) work experience has a positive effect on employee performance; and (3) competency has a positive effect on employee performance.
