Abstract

Konsumsi makanan dan minuman jadi di Indonesia mengalami peningkatan dari tahun ke tahun. Salah satu produk yang termasuk makanan jadi yaitu roti dan kue. Pada tahun 2023, tingkat konsumsi roti dan kue di Provinsi Banten meningkat sebesar 5,83 persen. Golden Bakery merupakan salah satu usaha yang bergerak di industri roti. Golden Bakery Citra Raya menawarkan produk mulai dari roti Golden Buns yang menjadi ikon dari toko roti ini hingga beragam kue kering dan basah. Dalam penelitian ini, tujuan utama yang ingin dicapai adalah untuk menganalisa penerapan rekayasa menu pada produk kue di Golden Bakery, Citra Raya. Penelitian ini menggunakan metode deskriptif pendekatan kualitatif, di mana data dikumpulkan dengan menganalisis angka penjualan, membandingkan biaya dengan pendapatan, atau mencari tahu produk mana yang memberikan keuntungan tertinggi. Melalui analisis data dan tingkat penjualan, produk-produk diklasifikasikan ke dalam empat kategori Menu Engineering: Star, Plow Horse, Puzzle, dan Dog. Hasil dari peneltitian ini menunjukkan bahwa produk dalam kategori kue memiliki 1 produk dalam kategori star, 4 produk dalam kategori puzzle, dan 8 produk dalam kategori plowhorse. Tindakan yang diambil yaitu melakukan analisis mendalam terhadap produk, mengevaluasi food cost, meningkatkan posisi menu atau mengganti menu, meningkatkan strategi promosi, menyesuaikan harga jual, meningkatkan strategi promosi yang di mana hal ini disesuaikan dengan masing-masing kategori. / Consumption of prepared food and drinks in Indonesia has increased from year to year. One of the products included in prepared food is bread and cakes. In 2023, the level of bread and cake consumption in Banten Province has increased by 5.83 percent. Golden Bakery is a business operating in the bread industry. Golden Bakery Citra Raya offers products ranging from Golden Buns bread which is the icon of this bakery to a variety of cookies and cakes. In this research, the main objective to be achieved is to analyze the application of menu engineering to cake products at Golden Bakery, Citra Raya. This research uses a descriptive qualitative approach, where data is collected by analyzing sales figures, comparing costs with income, or finding out which products provide the highest profits. Through data analysis and sales levels, products are classified into four Menu Engineering categories: Star, Plow Horse, Puzzle, and Dog. The results of this research show that products in the cake category have 1 product in the star category, 4 products in the puzzle category, and 8 products in the plowhorse category. The actions taken are carrying out in-depth analysis of the product, reducing food costs, increasing menu positions or changing menus, improving promotional strategies, adjusting selling prices, improving promotional strategies which are tailored to each category.
