Abstract

Indonesia dikenal sebagai negara agraris dengan kekayaan alam dan keanekaragaman hayati yang melimpah, termasuk rempah-rempah yang memiliki peran penting dalam sejarah bangsa. Penelitian ini bertujuan untuk mengembangkan buku resep berjudul “Fusion Cocktails with Indonesian Herbs and Spices” yang menggabungkan rempah-rempah Indonesia dengan seni mixology modern. Dalam seminar hasil, penulis menyampaikan latar belakang, tujuan, metode, dan hasil penelitian, serta menerima umpan balik untuk penyempurnaan buku resep. Metode yang digunakan meliputi uji organoleptik pada 20 variasi cocktail dengan penilaian mutu hedonik dari 1 (tidak suka) hingga 5 (sangat suka) berdasarkan aroma, penampilan, rasa, dan rasa setelah minum. Hasil seminar mengungkapkan bahwa buku resep ini perlu perbaikan pada tampilan dan isi untuk memudahkan pembaca dan meningkatkan daya tarik. Rekomendasi dari reviewer telah diimplementasikan oleh tim penulis untuk menyempurnakan buku resep. Kesimpulan dari seminar ini menunjukkan bahwa penggunaan rempah-rempah Indonesia dalam cocktail tidak hanya memperkaya rasa dan aroma tetapi juga menambah nilai historis dan budaya. / Indonesia is known as an agrarian country with abundant natural resources and biodiversity, including spices that play an important role in the nation's history. This study aims to develop a recipe book titled "Fusion Cocktails with Indonesian Herbs and Spices," combining Indonesian spices with modern mixology. In the results seminar, the author presented the background, objectives, methods, and findings of the research, and received feedback for improving the recipe book. The method used included organoleptic testing of 20 cocktail variations with a hedonic quality rating from 1 (dislike) to 5 (like very much) based on aroma, appearance, taste, and aftertaste. The seminar results revealed that the recipe book needs improvements in its presentation and content to make it easier for readers and more attractive. Recommendations from the reviewers have been implemented by the writing team to refine the recipe book. The seminar concluded that the use of Indonesian spices in cocktails not only enhances flavor and aroma but also adds historical and cultural value.
