Abstract
Kacang polong (Pisum sativum L.) memiliki kemampuan fungsional karena mengandung senyawa flavonoid dan fenolik. Buah tomat (Solanum lycopersicum L.) memiliki kemampuan fungsional karena mengandung senyawa aktivitas antioksidan, karotenoid, dan vitamin C. Tujuan dari penelitian ini adalah membuat minuman fungsional dengan bahan dasar kacang polong dan buah tomat. Pada penelitian ini dilakukan perbandingan rasio sari kacang polong dan sari buah tomat (100:0; 75:25; 50:50; 25:75; 0:100%). Kacang polong dan tomat dibuat sari terlebih dahulu sebelum dilakukan pencampuran formulasi. Hasil penelitian menunjukkan bahwa rasio dengan konsentrasi 50:50% merupakan perlakuan terpilih karena memiliki persen penghambatan radikal bebas sebesar 1,74%, total karotenoid sebesar 77,53 µg/g, total vitamin C sebesar 123,74 mg/L, total fenolik sebesar 183,83 mg GAE/L, dan total flavonoid sebesar 131,21 mg QE/L. Rasio sari 50:50% kemudian digunakan untuk penelitian lebih lanjut dengan variasi konsentrasi gula (10 dan 20%) dan xanthan gum (0,05; 0,10; dan 0,15%). Penelitian lebih lanjut menunjukkan bahwa minuman fungsional dengan konsentrasi gula 20% dan xanthan gum 0,05% merupakan perlakuan terpilih karena memiliki persen penghambatan radikal bebas sebesar 1,29%, total karotenoid sebesar 1,02 µg/g, total vitamin C sebesar 84,39 mg/L, total fenolik sebesar 156,86 mg GAE/L, dan total flavonoid sebesar 118,53 mg QE/L, uji hedonik pada parameter rasa 5,60, mouthfeel sebesar 5,39, stabilitas minuman fungsional sebesar 5,10, dan keseluruhan sebesar 5,41.
