Abstract

Kitosan merupakan produk turunan deasetilasi kitin dari pengolahan limbah udang yang memiliki struktur 2-amino-2-deoksi-D-glukosa. Kitosan memiliki banyak manfaat dalam bidang pangan, namun karena kelarutannya yang rendah dalam air membatasi aplikasinya pada pangan. Kitosan hanya larut dalam asam, sehingga berat molekulnya perlu diturunkan dengan proses hidrolisis, salah satunya adalah hidrolisis asam yang bertujuan untuk melarutkan kitosan dalam air. Dalam penelitian ini, berbagai konsentrasi asam asetat (1, 3, 5%) diteliti. Sebagai tambahan, waktu hidrolisis (30, 60, 90 menit) dan suhu hidrolisis (30, 40, 50, 60oC) juga diteliti pengaruhnya terhadap karakteristik fisik dan kimia dari water soluble chitosan. Hasil yang didapatkan pada penelitian ini menunjukkan bahwa konsentrasi asam asetat 5% dapat menghasilkan water soluble chitosan dengan berat molekul terendah 198,64 kDa dan kelarutan tertinggi 46,10%. Water soluble chitosan yang dihidrolisis pada suhu 60oC selama 90 menit memiliki derajat deasetilasi 92,92%, viskositas 0,85 cP, berat molekul 166,34 kDa, dan kelarutan dalam air sebesar 53,66%.
