Abstract

Sweetened condensed milk was a conventional way to preserve raw milk by adding high amount of sugar. It’s classified as an intermediate moisture food, due to its low water activity. Despite its low water activity, that directly inhibit the growth of most microorganisms, its packaging especially can, was prone to physical damage. Damaged can could leads to heavy metal contaminant, specifically tin. This research was meant to know how many damaged cans that still distributed by several retailers in South Tangerang using acceptance sampling technique. This research was also meant to know consumers thought about damaged can and evaluate their effect toward product safety and quality. By conducting a field research, it showed that the majority of consumers stated damaged can has negative effect toward health and product quality. However, by statistically sampling, laboratory assays and sensory evaluation prove that damaged can has no effect toward product safety and quality
