Abstract

Indonesian people still lack in daily consumption of calcium. Pohpohan as indigenous plant in Indonesia contains high calcium with minimal utilization due to distinct smell and astringent taste. Eucheuma cottonii is abundant in Indonesia but the use as material in the making of edible seaweed sheet is not common. Therefore, the aim of this research was to develop the utilization of pohpohan leaves as source of calcium in corporation with seaweed in the making of edible seaweed sheet. The edible seaweed sheet is made by adding 3 level glycerol concentration (5, 10, 15%) and pohpohan leaf powder : seaweed ratio of 10:90, 15:85, and 20:80. The result shows that color and thickness were not affected by glycerol concentration and pohpohan leaf powder : seaweed ratio while texture and moisture content were affected. The result also shows that the edible seaweed sheet acceptance is mostly affected by the concentration of glycerol. The edible seaweed sheet made with 10% glycerol concentration and 15:85 ratio of pohpohan leaf powder and seaweed is the most preferred. This edible seaweed sheet has higher ash, protein, and fat content from the control edible seaweed sheet. Based on its calcium, protein, and fat content, this edible seaweed is considered as high calcium, source of protein, and free of fat product respectively.
