Abstract

Mas banana (Musa paradisiaca L.), was one of local banana that has a very short shelf life. Both physical and chemical changes happened very fast shortly after harvesting. Therefore in this research edible film made from jackfruit seed starch were applied to lengthened the shelf life of this local banana. Previous research were already determined three possible formulation of edible film in lengthening the shelf life of strawberry fruit, which were formulation 1 (3,5% starch-2,5% glycerol), formulation 2 (3,5% starch-2,5% sorbitol) and formulation 3 (5,5% starch-2,5% sorbitol). In this research those three combinations were then applied into banana stored in ambient temperature (26-28oC). Index maturity was used to determine the shelf life of banana, and the physicochemical changes (weight loss, Total soluble solid, Total tititrable acidity, Total reduction sugar, hardness and color) in Mas banana were then observed during storage. The coated banana is proven to prolong the shelf life up to 12 days for edible film with formulation 2 and 3, which is longer than the uncoated banana (6 days). Moreover, whole banan coated with formulation 3 can prolong the maturity until 11 days, while whol banana coated with plastic wrap prolong the maturity only 8 days.
