Abstract

Catfish (Clarias gariepinus) with weight more than 250 grams is usually rejected by the consumer, therefore it needs to be processed in advance to become high value product. One of the alternative is to make Fish Protein Concentrate (FPC). FPC is animal protein that contains more than 60% protein and can be fortified into food. The purposes of this research were to obtain the best solvent and frequency of extraction on making FPC and to apply FPC through fortification of crackers. The best FPC in this research was produced by using the combination of ethyl acetate and isopropanol for 3 times extraction. The best FPC contained protein dan fat 2.26% and 82.44% respectively. The best FPC also had characteristics 0.46 g/ml of bulk density, 377.62% of water absorption value, 83.98% of whiteness, 446,28 mg/g of amino acid, and 93.97% of digestibility. The best FPC was then used to fortify crackers with different levels of concentration (0, 2,5, 5, 7,5, 10%). The crackers fortified with 10% FPC were well received by panelists based on organoleptic test. The crackers had 4.54% of moisture content, 17.14% of protein, 13.45% of fat, 2.02% of ash, 64.16% of carbohydrate, 347.90% of water absorption, 86.29% of digestibility, and 111,31 mg/g of amino acid. The crackers fortified 10% FPC had the similar organoleptic scores to the commercial crackers, however it had different protein and fat contents.
