Abstract
Red ginger root (Zingiber officinale Roxb. var. rubrum Theilade) oleoresin has
been reported to contain antioxidant compounds. However, some ginger bioactive
compounds are known to deteriorate easily due to oxidation. Microencapsulation
is a method which can be used for stabilizing bioactive compounds. The objective
of this research was to study the utilization of okra mucilage as a natural coating
material and investigate the effects of its combination with sodium casein. The
produced microcapsule was compared to microcapsule produced by using
commercial coating material, maltodextrin. Two different core to coating ratios of
1:10 and 1:20 were used. Emulsions were prepared using ultrasonication for 20
minutes and were spray dried at four different inlet temperatures of 130, 150, 170,
and 190°C. Antioxidant activity, total phenolic content, encapsulation efficiency,
powder recovery, release studies, and particle size were determined. The okra
mucilage core to coating ratio of 1:20 spray dried at 130°C inlet temperature was
found to be the best treatment of this research which produced microcapsule with
higher antioxidant activity (IC50 357.9410 ± 9.748 mg/L), total phenolic content
(33.985 ± 0.314 mg GAE/g sample), and encapsulation efficiency (134.602 ±
2.401%).
