Abstract

Bakso merupakan salah satu jenis makanan yang populer dan menjadi favorit di kalangan masyarakat Indonesia. Bakso dibuat dengan cara mencampur daging yang digiling hingga halus, diberi tambahan tepung dan perasa, lalu dibentuk bulat. Namun, tidak semua kalangan masyarakat dapat menikmati bakso yang terbuat dari daging karena memiliki pola makan tertentu. Penelitian ini dilakukan untuk mengetahui cara membuat bakso dengan protein nabati berupa Chickpeas sebagai bahan utamanya. Chickpeas dipilih karena masih jarang diketahui oleh masyarakat padahal memiliki banyak manfaat bagi kesehatan. Jenis penelitian yang digunakan adalah penelitian eksperimen dengan percobaan sebanyak tiga kali. Produk bakso Chickpeas akan diberikan kepada 35 orang panelis untuk dinilai. Hasil dari penelitian ini adalah produk bakso Chickpeas yang dinilai terasa gurih dan bertekstur kenyal. Peneliti berharap bakso ini dapat dijadikan pilihan baru lauk makanan sehari-hari yang lebih sehat dan praktis bagi masyarakat, terutama yang tidak bisa mengonsumsi daging. / Meatball is one of the most favorite and popular food in Indonesian society. Meatball is made by mixing ground meat with added flour and seasoning, and then rolled into a round shape. However, not all people can enjoy meatballs made from meat because of their diet. The study was conducted to see how to make meatballs with vegetable protein in the form of Chickpeas nuts as the main ingredient. Chickpeas beans were chosen because they are still rarely known by the public even though they have many health benefits. Experimental study was conducted in this study with three times of trials. Chickpeas meatballs will be given to 35 panelist to be rated. The result of this study were Chickpeas meatball products which had a tasty and chewy texture. Researchers hope that these meatballs can be used as a new choice of side dishes that are healthier and more practical for people, especially those who cannot consume meat.
