Abstract
The design of this typical Kalimantan culinary recipe book was designed because the author himself is a native of Kalimantan who lacks knowledge about cooking. Moreover, again the questionnaire that the author has distributed, it can be said that there are still many young people who do not know the typical cuisine of Kalimantan. The author does not want the next generation to suffer the same fate, so the design of this Typical Kalimantanese Culinary Recipe Book can provide education about the culinary diversity of Kalimantan so that the next generation can continue the tradition of typical Kalimantan cuisine. In addition, the author also hopes that this recipe book can encourage people to get to know the culinary specialties of Kalimantan more deeply so that some people who have never known this cuisine can attract interest in trying the culinary tastes of Kalimantan. The purpose of this recipe book is to: (1) Provide education on the culinary diversity of Kalimantan. (2) To introduce the culinary specialties of Kalimantan to the public in order to attract interest in trying the culinary tastes. (3) As an idea to open a typical Kalimantan restaurant business. / Rancangan buku resep kuliner khas Kalimantan ini dirancang karena mengingat penulis sendiri adalah penduduk asli Kalimantan yang minim pengetahuan tentang masakan. Apalagi melihat kembali kuisioner yang telah penulis bagikan, dapat disimpulkan bahwa masih banyak generasi muda yang belum mengetahui masakan khas Kalimantan. Penulis tidak ingin generasi penerus bernasib sama, sehingga diharapkan perancangan Buku Resep Kuliner Khas Kalimantan ini dapat memberikan edukasi tentang keanekaragaman kuliner dari Kalimantan sehingga generasi penerus dapat melanjutkan tradisi masakan khas Kalimantan. Selain itu, penulis juga berharap buku resep ini dapat mendorong masyarakat untuk mengenal kuliner khas Kalimantan lebih dalam sehingga sebagian masyarakat yang belum pernah mengenal masakan tersebut dapat menarik minat untuk mencoba cita rasa kuliner khas Kalimantan. Adapun tujuan dibuatnya buku resep ini untuk: (1) Memberikan edukasi keragaman kuliner khas Kalimantan. (2) Untuk memperkenalkan kuliner khas Kalimantan kepada masyarakat agar menarik minat untuk mencoba cita rasa kuliner tersebut. (3) Sebagai ide untuk membuka usaha rumah makan khas Kalimantan.
