Abstract

Teh herbal merupakan salah satu jenis minuman yang dikonsumsi bagi kesehatan manusia dan merupakan salah satu aplikasi pemanfaatan daun kelor untuk dikonsumsi masyarakat luas. Kelor merupakan jenis tanaman yang populer karena kandungan senyawa bioaktif dan nutrisinya yang berlimpah. Tumbuhan kelor tersebar luas di Indonesia dengan banyak senyawa fitokimia seperti flavonoid, saponin, alkaloid dan tanin. Senyawa-senyawa yang terdapat pada daun kelor dapat berfungsi sebagai anti inflamasi, antibakteri. Kandungan bioaktif daun kelor sangat beragam antara lain adalah senyawa flavonoid polifenol seperti kuersetin dan kaemferol, alkaloid, glukosinolat dan tanin. Daun kelor diolah menjadi ekstrak untuk diperiksa komponen bioaktifnya. Dalam proses ekstraksi, terdapat beberapa faktor yang memengaruhi aktivitas antioksidan daun kelor antara lain adalah jenis pelarut dan lama maserasi. Agar menghasilkan aktivitas antioksidan yang paling kuat bagi ekstrak daun kelor, perlu ditentukan jenis pelarut serta lama maserasi terbaik. Teh herbal tidak memerlukan proses yang terlalu rumit yaitu hanya dengan pengeringan dan penyeduhan, sehingga pengolahannya yang minimal dapat meminimalisir turunnya kandungan penting pada bahan seperti komponen bioaktif. Proses pembuatan teh daun kelor cukup sederhana dan mudah, tahapannya yakni melalui proses blansir untuk menginaktivasi enzim, pengeringan kemudian teh dapat diseduh dengan air panas. Tujuan dari kajian pustaka ini adalah untuk mengetahui kandungan bioaktif dan bioaktivitas pada daun kelor, serta mengetahui peluang daun kelor menjadi sumber antioksidan dan aplikasi daun kelor pada teh herbal. Daun kelor menunjukkan potensi yang baik untuk menjadi sumber antioksidan alami dengan nilai IC50 sebesar 22,1818 ppm. Pelarut yang digunakan untuk mengekstrak daun kelor adalah pelarut polar dan lama maserasi 48 jam. / Herbal tea is one of the beverage type that is consumed for health and is one of the applications of using Moringa oleifera for consumption. Moringa is a popular plant because of its bioactive compounds. Moringa plants are widespread in Indonesia with many phytochemical compounds such as flavonoids, saponins, alkaloids and tannins. The compounds contained in Moringa leaves can function as antiinflammatory, antibacterial. The bioactive content of Moringa leaves is very diverse, which is polyphenolic flavonoid compounds such as quercetin and kaemferol, alkaloids, glucosinolates and tannins. Moringa leaves are processed into extracts to be examined for their bioactive components. In the extraction process, there are several factors that affect the antioxidant, including the type of solvent and the maceration time. In order to produce the strongest antioxidant activity for Moringa leaf extract, it is necessary to determine the type of solvent and the best maceration time. The process of making Moringa leaf tea is quite simple and easy, the steps are through the blanching process to inactivate enzymes, drying and then tea can be brewed. The purpose of this literature review is to determine the bioactive content and bioactivity in Moringa leaves, as well as to determine the opportunities for Moringa leaves to be a source of antioxidants and the application of Moringa leaves to herbal teas. Moringa leaf has potential to be natural antioxidant source with IC50 value 22,1818 ppm. The solvent used in Moringa leaf extract is a polar solvent and using 48 hours for maceration time.
