Abstract

Nowadays, the food and beverages business has been growing fast in Medan, Indonesia. There are a lot of new competitors that enter the market. In order to survive in this industry, restaurants need to have stand-out features that will attract customers. One of the most important factors is service efficiency, as restaurants are considered in the hospitality industry. The purpose of this research is to analyze the factors, either internal or external, that can affect the service efficiency in Grand Ocean Restaurant, Medan. The research will be conducted by direct and non-participant observation and interview in order to gather facts and proof so the researcher can make further analysis. This research that is conducted, it is showed that there is a crucial relationship between the internal and external factors of Grand Ocean Restaurant, Medan the service efficiency. They need to assess more of their potential in innovation, service and operations, and technology./ Saat ini, bisnis di bidang makanan dan minuman telah berkembang pesat di Medan, Indonesia. Ada sangat banyak pesaing baru yang masuk ke dalam industri ini. Untuk bertahan dalam industri ini, restoram-restoran harus bisa memiliki fitur menonjol yang bisa menarik perhatian para pelanggan. Salah satu factor yang paling penting adalah efisiensi pelayanan, karena restoran termasuk dalam bidang industri pelayanan. Tujuan dari penelitian ini adalah untuk menganalisis faktor-faktor, faktor internal maupun faktor eksternal yang mempengaruhi efisiensi pelayanan di Restoran Grand Ocean, Medan. Penelitian ini akan dilakukan dengan observasi secara langsung dan tidak langsung, dan juga melalui wawancara, untuk mengumpulkan fakta dan bukti, sehingga peneliti dapat membuat analisis lebih lanjut. Dengan penelitian yang dilakukan, ditunjukkan bahwa ada hubungan yang penting antara faktor-faktor internal dan external dari Restoran Grand Ocean, Medan, dengan efisiensi pelayanan. Mereka perlu lebih mempertimbangkan potensi mereka dalam inovasi, pelayanan dan operasional, serta teknologi.
