Abstract
Penelitian ini bertujuan untuk menganalisis pengaruh food authenticity, trend awareness, dan social influence terhadap keputusan pembelian (purchase decision) di Seroja Bake Café karena merepresentasikan isu yang relevan dengan dinamika pasar kuliner saat ini, terutama dalam konteks perubahan preferensi konsumen modern. Seroja Bake Café Jakarta dikenal dengan pendekatan uniknya dalam menyajikan makanan yang mengedepankan keaslian bahan dan metode pembuatan, sehingga food authenticity menjadi elemen yang sangat penting untuk diteliti. Selain itu, kehadiran media sosial dan tren konsumen masa kini menjadikan trend awareness dan social influence sebagai faktor yang berperan besar dalam memengaruhi keputusan pembelian. Novelty penelitian ini adalah penelitian sebelumnya tidak memasukkan variabel trend awareness terhadap purchase decision dan hanya meneliti salah satu variabel endogennya saja yaitu food authenticity dan social influence, jadi penelitian ini menggabungkan dan menambah variabel yang baru yaitu trend awareness terhadap pengaruh purchase decision. Populasinya adalah semua konsumen di Seroja Bake Café. Dengan teknik pengambilan sampel yaitu purposive sampling, maka sampel pada penelitian ini terdiri dari 166 responden dengan kriteria responden adalah individu yang merupakan konsumen Seroja Bake Café, responden pernah membeli produk Seroja Bake Cafe Jakarta dalam kurun waktu minimal 1 bulan terakhir. Pengumpulan data dilakukan melalui penyebaran kuesioner yang dirancang untuk mengukur persepsi responden terhadap variabel-variabel yang diteliti. Teknik analisis data yang digunakan adalah Structural Equation Modeling- Partial Least Square (SEM-PLS). Hasil analisis menunjukkan bahwa ketiga variabel eksogen memiliki pengaruh terhadap keputusan pembelian, jadi food authenticity, trend awareness, dan social influence terhadap keputusan pembelian (purchase decision) di Seroja Bake Café Jakarta.

This study aims to analyze the influence of food authenticity, trend awareness, and social influence on purchasing decisions at Seroja Bake Café because they represent issues that are relevant to the dynamics of the current culinary market, especially in the context of changing preferences of modern consumers. Seroja Bake Café is known for its unique approach in serving food that emphasizes the authenticity of ingredients and manufacturing methods, so that food authenticity becomes a very important element to study. In addition, the presence of social media and current consumer trends make trend awareness and social influence factors that play a major role in influencing purchasing decisions. The novelty of this study is that previous studies did not include trend awareness variables on purchase decisions and only examined one of the endogent variables, namely food authenticity and social influence, so this study combines and adds a new variable, namely trend awareness on the influence of purchase decisions. The population is all consumers at Seroja Bake Café. With the sampling technique of purposive sampling, the sample in this study consisted of 166 respondents with the criteria Respondents are individuals who are consumers of Seroja Bake Café, respondents have purchased Seroja Bake Café products in the last 1 month. Data collection was carried out by distributing questionnaires designed to measure respondents' perceptions of the variables studied. The data analysis technique used is Structural Equation ModelingPartial Least Square (SEM-PLS). The results of the analysis show that the three eksogent variables have a significant influence on purchasing decisions, so food authenticity, trend awareness, and social influence on purchasing decisions at Seroja Bake Café Jakarta.
