Abstract
Penelitian ini bertujuan menganalisis penggunaan bahan baku lokal di restoran hotel bintang lima dari perspektif keberlanjutan dan dukungan terhadap komunitas petani lokal. Penggunaan bahan baku lokal tidak hanya mengurangi jejak karbon tetapi juga mendukung ekonomi lokal dengan menciptakan pasar yang berkelanjutan bagi petani. Melalui wawancara dengan pengelola restoran dan koki. Ditemukan bahwa bahan baku lokal berkontribusi besar pada kelestarian lingkungan dan penguatan komunitas petani. Namun, tantangan seperti ketersediaan bahan musiman dan fluktuasi harga tetap perlu diatasi. Penelitian ini merekomendasikan kolaborasi erat antara hotel dan petani lokal melalui kemitraan jangka panjang, pelatihan, serta diversifikasi sumber bahan baku untuk memastikan kontinuitas pasokan. Dengan dukungan ini, hotel dapat memperkuat ekonomi lokal dan menciptakan ekosistem perhotelan yang berkelanjutan.

This study aims to analyze the use of local raw materials in five-star hotel restaurants from the perspective of sustainability and support for local farming communities. The use of local raw materials not only reduces the carbon footprint but also supports the local economy by creating a sustainable market for farmers. Through interviews with restaurant managers and chefs. It was found that local raw materials play a significant role in environmental sustainability and strengthening local farming communities. However, challenges such as seasonal availability and price fluctuations still need to be addressed. This study recommends close collaboration between hotels and local farmers through long-term partnerships, training programs, and diversification of raw material sources to ensure supply continuity. With this support, hotels can strengthen the local economy and create a sustainable hospitality ecosystem.
