Abstract
Sektor pariwisata dan kuliner di Indonesia terus mengalami pertumbuhan yang signifikan, khususnya di wilayah perkotaan seperti Jakarta. Permintaan yang meningkat terhadap makanan cepat saji yang sehat dan praktis membuka peluang besar bagi bisnis kuliner inovatif. Salah satu tren makanan internasional yang memiliki potensi di Indonesia adalah onigiri, hidangan tradisional Jepang berbahan dasar nasi. Inogiri hadir sebagai restoran dengan layanan cepat yang menawarkan berbagai varian onigiri yang menggabungkan cita rasa lokal dan internasional, seperti Cakalang Balado dan Salmon Mentai. Selain menyajikan menu utama, Inogiri juga memperkuat pengalaman pelanggan melalui Onigiri Creative Workshop, sebuah program interaktif yang mengajarkan peserta cara membuat onigiri, dengan target utama mahasiswa dan pekerja di sekitar lokasi. Studi kelayakan bisnis ini menganalisis potensi pasar, efisiensi operasional, struktur organisasi, sumber daya manusia, dan kelayakan finansial. Data penelitian diperoleh melalui observasi lapangan, survei konsumen, dan studi literatur. Analisis keuangan menunjukkan hasil Net Present Value (NPV) sebesar Rp 265.849.320, Payback Period selama 3 tahun 4 bulan, Profitability Index (PI) sebesar 1,21, dan Internal Rate of Return (IRR) sebesar 30,81 persen, yang menunjukkan bahwa bisnis ini layak untuk dijalankan. Dengan konsep inovatif, menu yang beragam, dan strategi keterlibatan pelanggan yang kuat, Inogiri berkomitmen untuk memenuhi kebutuhan masyarakat urban akan makanan cepat saji yang segar, unik, dan berkualitas tinggi.

The culinary and tourism sectors in Indonesia have experienced significant growth, particularly in urban areas like Jakarta. The increasing demand for healthy and practical fast food presents promising opportunities for innovative culinary businesses. One example of an international food trend with potential in Indonesia is onigiri, a traditional Japanese rice-based dish. Inogiri positions itself as a modern and innovative quick-service restaurant offering a variety of onigiri flavors that combine local and international tastes, such as Cakalang Balado and Salmon Mentai. In addition to its core menu, Inogiri enhances its customer experience through the Onigiri Creative Workshop, an interactive program where participants learn to make onigiri, targeting students and professionals in the surrounding area. This business feasibility study analyzes market potential, operational efficiency, organizational structure, human resources, and financial viability. Data collection includes field observations, consumer surveys, and secondary research. The financial analysis reveals a Net Present Value (NPV) of Rp 265,849,320, a Payback Period of 3 years and 4 months, a Profitability Index (PI) of 1.21, and an Internal Rate of Return (IRR) of 30.81 percent, demonstrating that the business is financially feasible. With its innovative concept, diverse offerings, and strong engagement strategy, Inogiri aims to cater to the growing demand for fast and fresh food, while providing a unique and interactive dining experience that distinguishes it from competitors.
