Abstract
Potatoes are vegetables with lots of starch and could be used as a substitute for rice and flour as main carbohydrates. Supported by the affordable prices, potatoes are one of the plants widely consumed by people as staple foods. This research uses potatoes as the main ingredient and substitute for protein flour, which is cheaper and healthier for people with a high risk of diabetes and gluten allergies. Community service is one of the three dharmas of higher education that can be proposed to increase a sense of concern for the community by sharing knowledge and skills. The objectives of this community service activity are: (1) providing training on making lava cake and colenak tart from potato base ingredients (2) providing techniques for making lava cake and colenak tart (3) building collaboration between the Faculty of Tourism, Pelita Harapan University and the Pasar Church Kemis KotaBumi (4) carries out one of the Tri Dharma functions of higher education, especially in the field of Community Service.

Kentang merupakan sayuran yang banyak mengandung pati dan dapat digunakan sebagai pengganti nasi dan tepung terigu sebagai karbohidrat utama. Didukung dengan harganya yang terjangkau, kentang menjadi salah satu tanaman yang banyak dikonsumsi masyarakat sebagai makanan pokok. Penelitian ini menggunakan kentang sebagai bahan utama dan pengganti tepung protein yang lebih murah dan lebih sehat bagi masyarakat dengan risiko tinggi diabetes dan alergi gluten. Pengabdian kepada masyarakat merupakan salah satu tri darma perguruan tinggi yang dapat diusulkan untuk meningkatkan rasa kepedulian kepada masyarakat dengan cara membagi ilmu dan keterampilan. Tujuan dari kegiatan pengabdian kepada masyarakat ini adalah: (1) memberikan pelatihan pembuatan lava cake dan colenak tart dari bahan dasar kentang (2) memberikan teknik pembuatan lava cake dan colenak tart (3) membangun kerjasama antara Fakultas Pariwisata Universitas Pelita Harapan dengan Gereja Pasar Kemis KotaBumi (4) melaksanakan salah satu fungsi Tri Dharma perguruan tinggi khususnya di bidang Pengabdian kepada Masyarakat.
