Abstract
Perkembangan industri makanan dan minuman, khususnya di provinsi DKI Jakarta dapat dilihat dari jumlah penyedia layanan makanan dan minuman yang terus berkembang. Masuknya budaya asing mempengaruhi perubahan gaya hidup dan selera masyarakat Indonesia. Untuk mempertahankan budaya kuliner Indonesia, perpaduan kuliner asing dengan cita rasa Indonesia dapat menjadi strategi dalam melestarikan kuliner Indonesia. Tren dessert yang berkembang di Jakarta dan tingkat konsumsi makanan manis yang tinggi dapat menjadi peluang bisnis hidangan penutup manis. Sweet Match Dessert Café menawarkan produk kue modern yang dipadukan dengan cita rasa lokal Nusantara, yang dikemas dalam sebuah toples atau cake in a jar. Sweet Match Dessert Café menghadirkan konsep café dengan nuansa alam. Dalam pelaksanaannya, Sweet Match Dessert Café mengusung konsep “choose your own cake in a jar” yang mengutamakan preferensi pelanggan dalam menikmati hidangan penutup manis sesuai selera dan menciptakan pengalaman yang personal bagi pelanggan. Dalam merancang bisnis Sweet Match Dessert Café, digunakan metode studi kelayakan bisnis dengan pendekatan analisis deskriptif. Sumber data diperoleh dari data primer dan sekunder. Hasil analisis kelayakan bisnis pada Sweet Match Dessert Café mendapatkan hasil positif yaitu bisnis ini layak dijalankan berdasarkan keseluruhan analisis aspek yang memenuhi standar kelayakan bisnis.

The development of the food and beverage industry, especially in DKI Jakarta, can be seen from the number of food and beverage businesses that continue to grow. The influx of foreign cultures influences changes in the lifestyle and tastes of Indonesian people. To maintain Indonesian culinary culture, combining foreign culinary delights with Indonesian flavors can be a strategy for preserving Indonesian culinary delights. The growing of dessert trends in Jakarta and the high level of sweet consumption can be a good opportunity for business. Sweet Match Dessert Café offers modern cake products combined with local Indonesian flavors, packaged in a jar. Sweet Match Dessert Café presents a café with a nature concept. Sweet Match Dessert Café carries the idea of “choose your own cake in a jar” which prioritizes customer preferences in enjoying sweet desserts according to taste and creates a personal experience for customers. In planning the Sweet Match Dessert Café business, a business feasibility study method was used with a descriptive analysis approach. Data sources were obtained from primary and secondary data. The results of the business feasibility analysis for Sweet Match Dessert Café obtained positive results, namely that this business is feasible to run based on the overall analysis of aspects that meet business feasibility standards.
