Abstract
Indonesia dikenal sebagai negara dengan kekayaan budaya yang beragam, termasuk dalam tradisi kuliner. Setiap daerah memiliki kuliner khas yang dipengaruhi oleh faktor geografis, sejarah, dan interaksi budaya. Salah satu daerah yang menarik untuk diteliti adalah Bangka Belitung, yang memiliki tradisi kuliner unik sebagai hasil akulturasi budaya akibat posisinya yang strategis dalam jalur perdagangan internasional. Kue tradisional khas Bangka Belitung, seperti kue rintak, kue masin, dan kiping, tidak hanya mencerminkan keunikan budaya lokal tetapi juga sejarah dan nilai-nilai tradisional yang berharga. Namun, kurangnya dokumentasi dan pengetahuan pada masyarakat menyebabkan pengetahuan masyarakat, terutama generasi muda, tentang kue tradisional ini semakin berkurang. Penelitian ini bertujuan untuk melestarikan warisan kuliner khas Bangka Belitung melalui pengembangan buku resep berbasis kompetensi profesional. Buku ini tidak hanya berisi panduan pembuatan kue tradisional, tetapi juga menyajikan sejarah, nilai budaya, dan signifikansi dari setiap jenis kue. Dengan desain yang menarik dan informatif, buku resep ini memuat 20 jenis kue tradisional yang terbagi dalam tiga kelompok: kue basah, kue kering, dan roti. Setiap resep dilengkapi dengan foto, deskripsi bahan, langkah-langkah pembuatan yang sistematis, serta narasi sejarah yang mudah dipahami. Melalui pendekatan inovatif ini, buku resep diharapkan dapat menjadi media edukasi yang efektif untuk menambah pengetahuan, memperluas wawasan, dan mengembangkan keterampilan masyarakat dalam mengenal dan membuat kue tradisional khas Bangka Belitung. Buku ini juga bertujuan untuk meningkatkan apresiasi terhadap warisan budaya kuliner lokal sekaligus mempromosikan tradisi yang mulai terlupakan di tengah modernisasi yang cepat.

Indonesia is known as a country with diverse cultural wealth, including its culinary traditions. Each region has its own unique cuisine influenced by geographical, historical, and cultural interactions. One region of interest for research is Bangka Belitung, which boasts a distinctive culinary tradition shaped by cultural acculturation due to its strategic position along international trade routes. Traditional cakes from Bangka Belitung, such as kue rintak, kue masin, and kiping, not only reflect the uniqueness of local culture but also embody valuable historical and traditional values. However, the lack of documentation and public knowledge has led to a decline in awareness, particularly among the younger generation, about these traditional cakes. This study aims to preserve the culinary heritage of Bangka Belitung through the development of a recipe book based on professional competence. The book is not only a guide for making traditional cakes but also presents the history, cultural values, and significance of each type of cake. Designed to be engaging and informative, the recipe book features 20 types of traditional cakes divided into three categories: wet cakes, dry cakes, and bread. Each recipe is accompanied by photographs, ingredient descriptions, systematic step-by-step instructions, and historical narratives that are easy to understand. Through this innovative approach, the recipe book is expected to serve as an effective educational medium to enhance knowledge, broaden horizons, and develop skills in understanding and making traditional cakes from Bangka Belitung. Additionally, the book aims to increase appreciation for the local culinary heritage while promoting traditions that are increasingly forgotten amidst rapid modernization.
