Abstract

Penelitian ini bertujuan untuk mengkaji faktor-faktor yang mendukung keunggulan kompetitif pada bisnis keluarga di industri kuliner, dengan studi kasus pada Senusa Cita Rasa Kita di Bandung. Di tengah persaingan yang semakin ketat dan perkembangan teknologi yang pesat, bisnis keluarga dituntut untuk mampu berinovasi tanpa kehilangan identitas tradisionalnya. Penelitian ini menggunakan pendekatan kualitatif dengan paradigma konstruktivis dan strategi studi kasus. Data diperoleh melalui wawancara mendalam, observasi, dan dokumentasi, melibatkan pemilik, karyawan, dan konsumen. Hasil penelitian mengidentifikasi lima faktor utama yang membentuk keunggulan kompetitif, yaitu pengalaman keluarga, cita rasa autentik, kualitas produk dan layanan, adaptasi teknologi, dan inovasi produk. Temuan ini disusun dalam bentuk mini model theory yang menunjukkan kontribusi masing-masing faktor terhadap keunggulan kompetitif. Penelitian ini memberikan wawasan praktis bagi pelaku bisnis kuliner keluarga dalam membangun daya saing berkelanjutan melalui kekuatan tradisi dan inovasi. / This study aims to examine the factors that support competitive advantage in family businesses in the culinary industry, with a case study on Senusa Cita Rasa Kita in Bandung. Amidst increasingly tight competition and rapid technological developments, family businesses are required to be able to innovate without losing their traditional identity. This study uses a qualitative approach with a constructivist paradigm and strategic case studies. Data were obtained through in- depth interviews, observations, and documentation, involving owners, employees, and consumers. The results of the study identified five main factors that form competitive advantage, namely family experience, authentic taste, product and service quality, technological conditions, and product innovation. These findings are arranged in a mini-model theory that shows the contribution of each factor to competitive advantage. This study provides practical insights for family culinary business actors in building sustainable competitiveness through the power of tradition and innovation.
