Abstract

Dalam beberapa tahun terakhir, tren konsumsi makanan sehat di Indonesia meningkat signifikan seiring dengan kesadaran masyarakat terhadap gaya hidup sehat. Salah satu produk yang menjadi simbol tren ini adalah poke bowl, makanan khas Hawaii yang kini banyak dikembangkan di berbagai kota besar Indonesia. Di tengah persaingan yang ketat dalam industri kuliner sehat, HONU Poke & Matcha Bar menjadi salah satu brand yang berhasil bertahan dan mengalami peningkatan penjualan signifikan. Penelitian ini bertujuan untuk menganalisis strategi branding yang digunakan HONU dalam membangun brand awareness untuk meningkatkan daya beli konsumen pada produk poke bowl. Penelitian ini menggunakan pendekatan kualitatif dengan metode studi kasus. Teknik pengumpulan data melalui wawancara mendalam dan observasi. Hasil penelitian menunjukkan bahwa HONU berhasil membentuk identitas merek yang kuat melalui filosofi nama dan konsistensi visual, sehingga memudahkan konsumen mengenali dan mengingat merek tersebut. Strategi komunikasi digital yang aktif di media sosial juga terbukti efektif dalam memperluas jangkauan pasar dan meningkatkan keterlibatan audiens. Selain itu, kolaborasi dengan influencer dan brand lain memperkuat kredibilitas dan eksposur merek. Pengalaman pelanggan yang positif, baik dari segi pelayanan maupun kualitas produk, turut mendorong terjadinya word-of-mouth yang meningkatkan brand awareness dan minat beli. Dengan menggabungkan identitas merek, komunikasi digital, kolaborasi strategis, dan pengalaman pelanggan, HONU mampu membangun brand awareness secara efektif dan mendorong daya beli konsumen. /In recent years, the trend of consuming healthy food in Indonesia has grown significantly alongside increasing public awareness of healthy lifestyles. One product that has become a symbol of this trend is the poke bowl, a Hawaiian dish that has been widely adapted in major cities across Indonesia. Amid intense competition in the healthy culinary industry, HONU Poke & Matcha Bar has emerged as one of the brands that has successfully maintained its presence and experienced significant sales growth.This study aims to analyze the branding strategies used by HONU in building brand awareness on increasing consumer purchasing power to poke bowl. The research method applied is a qualitative approach using a case study design. Data collection techniques include in-depth interviews and observation. The results show that HONU has successfully built a strong brand identity through the philosophy behind its name and consistent visual elements, making it easier for consumers to recognize and remember the brand. An active digital communication strategy through social media has proven effective in expanding market reach and increasing audience engagement. Furthermore, collaborations with influencers and other brands have strengthened the brand's credibility and exposure. Positive customer experiences, in terms of both service and product quality, have also encouraged word-of-mouth promotion, further enhancing brand awareness and purchase intention. By combining brand identity, digital communication, strategic collaborations, and customer experience, HONU has effectively built brand awareness and driven consumer purchasing behavior
