Abstract
Bersama dengan menurunnya minat masyarakat Indonesia pada hidangan tradisional, dessert luar negeri mulai mendominasi pasar. Menurunnya minat terhadap hidangan tradisional berpotensi untuk memunahkan budaya dan makna sejarah yang terkandung di dalamnya. Letak Indonesia di garis khatulistiwa menjadikan es krim salah satu pencuci mulut yang paling diminati masyarakat. Hal ini membuka peluang bagi es tradisional Indonesia untuk menjadi pencuci mulut lokal yang diminati. Sebagai daerah yang terletak di Indonesia, Tangerang Raya juga menjual berbagai jenis es tradisional. Oleh karena itu, penjual es yang terletak di Tangerang Raya ditunjuk sebagai objek penelitian karena keberagaman jenis es yang dijualnya. Berdasarkan basis tersebut, penelitian ini dilakukan pada bulan Mei, dengan tujuan untuk membuat buku panduan wisata kuliner es tradisional Indonesia di Tangerang Raya. Penelitian ini dilakukan dengan metode satu jenis uji coba, yaitu uji validasi yang dilakukan oleh empat panelis ahli dan 56 responden target pembaca. Selain itu, data sekunder juga digunakan untuk mendukung hasil penelitian. Penelitian ini memiliki hasil dalam bentuk buku panduan wisata kuliner es tradisional Indonesia di Tangerang Raya yang membantu mempromosikan kuliner lokal, khususnya es tradisional Indonesia. Penelitian ini memiliki unsur inovatif dalam bentuk pengkajian es tradisional Indonesia dengan bentuk buku panduan wisata. / Together with the decline in Indonesian people’s interest in traditional dishes, foreign desserts are starting to dominate the market. The declining interest in traditional dishes has the potential to destroy the culture and historical meaning contained within. With Indonesia's location on the equator, ice cream is one of the most popular desserts in society. This opens up more opportunities for traditional Indonesian ices to become to become a popular locally sourced dessert. As an area located in Indonesia, Greater Tangerang also sells various types of traditional ice. Therefore, this research aims to appoint ice sellers located within Greater Tangerang as the object of this research. With this basis, this study was conducted in May with the aim of creating a culinary travel guidebook for traditional Indonesian ice in Tangerang Raya. This study was conducted with the use of one trial method, namely a validation test conducted by four expert panelists and 56 target reader respondents. In addition, secondary data was also used to support the research results. The result of this study takes form in a culinary travel guidebook for traditional Indonesian ices in Tangerang Raya which helps promote local cuisine, especially traditional Indonesian ices. The innovative element of this research resides in the study of traditional Indonesian ices in the form of a travel guidebook.
