Abstract

The Gereja Kristen di Indonesia (GKDI) is a religious organization actively engaged in spiritual activities and concerned with social issues in the community, while also encouraging the involvement of its congregation in productive endeavors. At GKDI Tangerang, a micro-enterprise initiative is run by members of the church, particularly youth involved in a group known as the campus ministry. This initiative aims to support church revenue through the development and sale of food products. as an effort to enhance product variety and economic value, this Community Service Program (PkM) was conducted in the form of a training session focused on creating tarts using jackfruit rags as the main ingredient. Jackfruit rags is a part of jackfruit that is typically discarded along with the peel, as it is considered unimportant and of little economic value. In fact, about 70 percent of the total weight of jackfruit rags consists of organic waste that may pollute the environment if not utilized properly. The training covered the potential and benefits of jackfruit rags, along with demonstrations on how to prepare various tart components, including jackfruit rags jam, tart crust (short-crust pastry), and the tart filling made from almond cream, dami jam, and whipped jackfruit rags. Participants also engaged in hands-on practice in groups formed by the organizing team. This activity is expected to empower church members to develop innovative, marketable food products, diversify the church's micro-enterprise offerings, and raise awareness about the creative use of local ingredients and sustainable food waste reduction.
