Abstract

Penelitian ini mengeksplorasi bagaimana kesadaran dan pengetahuan tamu memengaruhi perilaku pemborosan makanan di hotel bintang lima di Jakarta. Indonesia merupakan salah satu negara dengan tingkat pemborosan makanan tertinggi di dunia, dan sektor perhotelan, terutama hotel mewah, menjadi area penting untuk melakukan perubahan yang berarti. Layanan prasmanan dan kebiasaan tamu sering kali menyebabkan tingginya jumlah makanan terbuang. Dengan menggunakan kerangka Theory of Planned Behavior, penelitian ini meninjau apakah pemahaman dan kepedulian terhadap isu sampah makanan benar benar mendorong perilaku yang lebih bijak. Data dikumpulkan dari 197 tamu hotel melalui kuesioner daring dan dianalisis menggunakan SmartPLS 4. Hasilnya menunjukkan bahwa kesadaran tamu memiliki pengaruh yang kuat dan signifikan terhadap perilaku pemborosan makanan, sedangkan pengetahuan saja tidak secara langsung menghasilkan perubahan. Temuan ini menunjukkan bahwa peningkatan kesadaran melalui edukasi, pengingat visual, dan peran aktif staf hotel lebih efektif dibandingkan sekadar menyampaikan informasi. Studi ini memberikan wawasan praktis bagi pengelola hotel yang ingin mengurangi pemborosan makanan dan mendukung upaya keberlanjutan di sektor perhotelan. / This study explores how guest awareness and knowledge influence food waste behaviour in selected five star hotels in Jakarta. As Indonesia is among the largest contributors to global food waste, the hospitality industry, especially luxury hotels, presents a key opportunity for meaningful change. With buffet style dining and high guest turnover, these environments often experience significant food waste driven by guest behaviour. Using the Theory of Planned Behaviour as a foundation, this research examines whether understanding and concern about food waste actually translate into more mindful actions. Data were collected from 197 hotel guests through an online questionnaire and analysed using SmartPLS 4. The results show that guest awareness has a strong and significant influence on food waste behaviour, while knowledge alone does not directly lead to change. These findings suggest that raising awareness through education, visual reminders, and staff engagement may be more effective than simply sharing facts. This study offers practical insights for hotel operators aiming to reduce food waste and contributes to broader sustainability efforts in the hospitality sector.
