Abstract

Penelitian ini bertujuan untuk menganalisis pengaruh kualitas makanan dan persepsi harga terhadap niat berkunjung kembali pada Kafe Khoe Pek Goan Bloemenstad di Bandung. Pertumbuhan industri kuliner di Bandung yang sangat pesat menciptakan persaingan ketat antar pelaku usaha kafe. Untuk memenangkan persaingan, pemahaman atas faktor-faktor yang membentuk loyalitas konsumen sangat penting. Penelitian ini menggunakan pendekatan deskriptif kuantitatif dengan teknik purposive sampling. Data dikumpulkan melalui kuesioner daring kepada 224 responden, dengan 188 data yang valid. Analisis data dilakukan menggunakan Partial Least Squares Structural Equation Modeling (PLS-SEM). Hasil penelitian menunjukkan bahwa kualitas makanan berpengaruh positif dan signifikan terhadap niat berkunjung kembali (koefisien = 0,441), demikian pula persepsi harga (koefisien = 0,472). Nilai R² sebesar 0,773 menunjukkan kontribusi kuat kedua variabel terhadap niat kunjungan ulang. Kebaruan dari penelitian ini terletak pada penerapan teori loyalitas pelanggan di konteks kafe lokal dengan pendekatan menu engineering sebagai dasar pemilihan objek dan analisis. Hasilnya memberikan kontribusi praktis bagi manajemen kafe untuk menyusun strategi peningkatan kualitas dan penetapan harga produk. Penelitian ini juga memperluas wawasan akademik mengenai faktor-faktor pendorong revisit intention dalam industri makanan dan minuman. / This study aims to analyze the influence of food quality and perceived price on revisit intention at Khoe Pek Goan Bloemenstad Café in Bandung. The rapid growth of the culinary industry in Bandung has increased competition among café businesses. To stay competitive, understanding the key factors that drive customer loyalty is essential. This study adopts a descriptive quantitative approach, with purposive sampling and data collection via an online questionnaire. A total of 224 responses were gathered, with 188 valid for analysis. Data were processed using Partial Least Squares Structural Equation Modeling (PLS-SEM). The results show that food quality has a positive and significant effect on revisit intention (coefficient = 0.441), as does perceived price (coefficient = 0.472). The R² value of 0.773 indicates strong predictive power of both variables. The novelty of this study lies in applying customer loyalty theory in a local café setting, with menu engineering considerations as part of the context. The findings offer practical insights for café managers in enhancing quality and developing price strategies. This research also contributes academically by identifying key revisit drivers within the food and beverage sector.
