Abstract

Masalah yang sering muncul dalam industri pangan adalah adanya penyalahgunaan bahan kimia berbahaya dalam pengolahan makanan, dimana salah satunya adalah penggunaan formalin. Kandungan antosianin pada tanaman dapat bertindak sebagai indikator alami pH yang dapat dimanfaatkan untuk mendeteksi kandungan formalin pada makanan. Kandungan antosianin pada tanaman dapat diperoleh dari bagian tanaman yang berwarna merah, biru, atau ungu. Pembuatan paper test kit dilakukan dengan cara merendam kertas saring ke dalam ekstrak kulit buah naga merah, manggis, dan delima yang diketahui mengandung antosianin tinggiJuni w Paper test kit berbasis ekstrak limbah kulit buah dapat dikembangkan menjadi metode yang mudah, cepat, dan akurat untuk mendeteksi kandungan formalin dalam makanan. Metode penelitian ini meliputi ekstraksi antosianin dari masing-masing limbah kulit buah, uji identifikasi antosianin, analisis kandungan total antosianin, pembuatan paper test kit, penyiapan sampel makanan, uji sensitivitas paper test kit, dan uji selektivitas paper test kit yang dibandingkan juga dengan rapid test kit formalin dari LABSTEST. Berdasarkan hasil penelitian diketahui bahwa nilai kandungan total antosianin tertinggi diantara ekstrak limbah kulit naga merah, kulit manggis, dan kulit delima adalah ekstrak limbah kulit delima sebesar 14,53638 ppm. Larutan ekstrak mendeteksi formalin dengan prinsip perubahan warna dan perubahan pH. Pada pengujian menggunakan paper test kit ekstrak limbah kulit delima didapatkan hasil bahwa paper test kit tersebut tidak efektif dalam mendeteksi formalin. / A common problem in the food industry is the misuse of hazardous chemicals in food processing, one of which is the use of formalin. The anthocyanin content in plants can act as a natural pH indicator that can be used to detect formalin content in food. The anthocyanin content in plants can be obtained from parts of the plant that are red, blue, or purple. The paper test kit is made by soaking filter paper into the extract of red dragon fruit, mangosteen, and pomegranate skin which are known to contain high anthocyanins. Paper test kits based on fruit skin waste extract can be developed into an easy, fast, and accurate method for detecting formalin content in food. This research method includes anthocyanin extraction from each fruit skin waste, anthocyanin identification test, analysis of total anthocyanin content, making paper test kits, preparing food samples, paper test kit sensitivity test, and paper test kit selectivity test which is also compared with LABSTEST's rapid formalin test kit. Based on the research results, it is known that the highest total anthocyanin content value among red dragon fruit skin, mangosteen skin, and pomegranate skin waste extracts is pomegranate skin waste extract of 14,53638 ppm. The extract solution detects formalin by the principle of color change and pH change. In testing using the pomegranate skin waste extract paper test kit, the results showed that the paper test kit was not effective in detecting formalin.
