Abstract

Dewasa ini pembangunan restoran di Indonesia bertumbuh pesat. Hal ini tidak lepas karena permintaan pasar yang semakin meningkat terhadap kebutuhan akan restoran yang memiliki produk dengan rasa yang lezat, tempat yang nyaman, dan harga representatif. Selain itu, saat ini masyarakat dalam memenuhi kebutuhan makannya tidak hanya sekedar mengkonsumsi saja, akan tetapi seiring perkembangan zaman banyak yang menjadikannya sebagai gaya hidup. Salah satu restoran yang menawarkan hal tersebut adalah Hungry Jeff Restaurant. Penelitian ini bertujuan untuk menguji dan menganalisis pengaruh harga, kualitas layanan, dan kualitas produk terhadap word of mouth melalui kepuasan pelanggan pada Hungry Jeff Restaurant di Surabaya. Teknik analisis data yang digunakan adalah SEM (Structural Equation Model) dimana pengolahan data dilakukan menggunakan software Amos versi 16. Permodelan dengan SEM memungkinkan dijawabnya pertanyaan penelitian secara dimensional. Untuk pemilihan metode sampel yang digunakan adalah non probability sampling yaitu pemilihan sampel berdasarkan pada pertimbangan pribadi. Dari hasil penelitian diperoleh bahwa harga dan kualitas layanan berpengaruh signifikan terhadap kepuasan pelanggan, kualitas produk tidak berpengaruh terhadap kepuasan pelanggan, dan kepuasan pelanggan berpengaruh signifikan terhadap word of mouth pada Hungry Jeff Restaurant di Surabaya. Namun harga, kualitas layanan, dan kualitas produk berpengaruh signifikan terhad / Today, the construction of restaurant in Indonesia is growing rapidly. This is not out due to the increasing market demand to the need for a restaurant that has a product with a delicious taste, convenient place, and the representative price. In addition, at this time, the community in meeting the needs of eating is not just consume, but also with the times as much to make it a lifestyle. One restaurant that offers it is Hungry Jeff Restaurant. This study aims to examine and analyze the effect of price, service quality, and product quality to the word of mouth through customer satisfaction at Hungry Jeff Restaurant in Surabaya. The data analysis technique used is SEM (Structural Equation Model). Modeling with SEM allows to answer the research question be dimensionally. For the selection of sampling method used is non-probability sampling that the sample selection is based on personal considerations. The results showed that the price and service quality significantly influence customer satisfaction, product quality has no effect on customer satisfaction, and customer satisfaction significantly influence word of mouth at Hungry Jeff Restaurant in Surabaya
