Abstract

Buku resep "Sepuluh Makanan Khas Bali" merupakan karya yang mengangkat kekayaan kuliner Pulau Dewata. Buku ini menjelaskan tentang resep-resep masakan khas Bali yang menggunakan bumbu tradisional "Base Genep". Penyusunan buku resep ini melibatkan tahap persiapan, pembuatan, penyelesaian, dan produksi. Tahap persiapan meliputi konsep ide, pemilihan resep, dan penyusunan proposal. Tahap pembuatan mencakup penyusunan resep, pengumpulan bahan, serta uji coba hedonik terhadap rasa, aroma, tekstur, dan warna masakan. Tahap penyelesaian melibatkan penyusunan hasil penelitian dalam buku resep dengan tata letak yang menarik dan gambar-gambar ilustratif. Hasil buku resep ini memiliki resep-resep lengkap dengan gambar bahan, langkah-langkah pengolahan, estimasi waktu, dan perkiraan porsi. Buku ini bertujuan untuk memperkenalkan dan mempermudah pembaca dalam mengolah makanan khas Bali menggunakan base genep. Kata Kunci: Buku resep, makanan khas Bali, Base Genep, kuliner, masakan tradisional / The recipe book "Ten Typical Balinese Foods" is a work that elevates the culinary wealth of the Island of the Gods. This book describes recipes for Balinese specialties using traditional "Base Genep" spices. The preparation of this recipe book involves the stages of preparation, manufacture, completion and production. The preparation stage includes the concept of ideas, selection of recipes, and preparation of proposals. The manufacturing stage includes preparing recipes, gathering ingredients, and hedonic testing of taste, aroma, texture, and color of dishes. The completion stage involves compiling the research results in a recipe book with an attractive layout and illustrative pictures. The result of this recipe book has complete recipes with pictures of ingredients, processing steps, time estimates, and portion estimates. This book aims to introduce and make it easier for readers to prepare Balinese specialties using genep base. Keywords: Recipe book, Balinese specialties, Base Genep, culinary, traditional dishes
