Abstract

Teenagers interest in opening business in the industry of food and beverages getting higher as the time goes by, we can see it by looking into the field as more and more food stalls opened by teenagers. Food and beverages industry has a great prospect in long term as it is the main needs of human, Indonesia consumption GDP shows that the industry average growth each year from 2014 until 2016 is 5.19% per year Food Junction as the canteen of Pelita Harapan University will be a good place to start a food stall as there are an enormous amount of students and staff around the environment which will become the potential consumer of the business. There are many types of food that available in Food Junction but currently there is no Western or Italian cuisine that available which can become an opportunity. Before taking action, research need to be executed to see whether the opportunity can be taken or not and develop strategies to be succeed in the market. Online survey was done in order to see the reaction of the market to the idea of opening a Western or Italian cuisine food stall in Food Junction, gain information about the preference of the market and also gain customer feedback about the product. Observation show that the amount of sales per day in 2017 can exceed 215 portions a day which support the idea of opening a food stall. Marketing strategy need to be formed aligned with a set of niche target market and implemented. to penetrate the market and gain consumers. As the stall is neither big nor small, creating a sole trader business is enough with just an owner straight to the employees as the business structure. Key factors must be executed properly with some core values to maintain the quality of the product that will be served to the consumer. If all strategy executed properly and achieved all target, the business will reach the break event point and even gain profit in the 4th month.
