Abstract

The hotel industry is a large-scale business that requires large natural resources in its management, and produces a lot of waste through its activities and performance. If this management is not controlled and maintained properly, it will cause a negative impact on the environment and threaten the sustainability of the hotel business. Therefore, this research study aims to analyze the importance of handling and managing hotel waste and hotel performances to maintain the sustainability at The Apurva Kempinski Bali. Sustainability is the concept of developing the environment, society and economic responsibly to prevent exploitation and damages so it can continuously be utilized for future generations. This research will use qualitative research methods, where data is collected through observation and interviews with relevant informants. The data obtained will then be analyzed using a descriptive method. In order to maintain sustainability, Apurva Kempinski has been utilizing EarthCheck certification to manage and monitor their waste management and hotel performance. Waste management is carried out with the 3R concept, namely Reduce, Reuse and Recycle. Managing hotel performance also corresponds with CSR (Corporate Social Responsibility) activities. The results of this research state that hotel waste management and hotel performance is affecting the sustainability at Apurva Kempinski Bali. It is important that this management be implemented and carried out consistently over a long period of time for the benefit of the hotel and the environment. / Industri hotel merupakan bisnis skala besar yang membutuhkan sumber daya alam yang besar dalam pengelolaannya, serta menghasilkan sampah yang banyak melalui kegiatan dan performanya. Jika pengelolaan tersebut tidak dikontrol dan dipertahankan dengan benar, maka akan memberikan dampak buruk terhadap lingkungan, serta mengancam keberlanjutan bisnis hotel tersebut. Oleh sebab itu, penelitian ini bertujuan untuk menganalisa pentingnya penanganan dan pengelolaan sampah hotel dan performa hotel untuk mempertahankan keberlanjutan di The Apurva Kempinski Bali. Keberlanjutan adalah konsep pengembangan lingkungan, sosial dan perekonomian secara bertanggung jawab untuk mencegah eksploitasi dan kerusakan sehingga dapat terus dimanfaatkan untuk generasi mendatang. Penelitian ini akan menggunakan metode penelitian kualitatif, dimana data dikumpulan melalui observasi dan wawancara narasumber yang bersangkutan. Data yang diperoleh kemudian akan dianalisis dengan metode deskriptif. Untuk menjaga keberlanjutan, The Apurva Kempinski telah memanfaatkan sertifikasi EarthCheck untuk mengelola dan memantau pengelolaan limbah dan performa hotel mereka. Pengelolaan sampah dilakukan dengan konsep 3R yaitu Reduce, Reuse dan Recycle. Pengelolaan performa hotel juga sejalan dengan kegiatan CSR (Corporate Social Responsibility). Hasil dari penelitian ini menyatakan bahwa pengelolaan sampah dan performa hotel mempengaruhi keberlanjutan hotel. Pengelolaan tersebut penting diterapkan dan dijalankan secara konsisten dalam jangka waktu yang panjang demi kepentingan hotel dan lingkungan.
