Abstract

Rekayasa menu adalah metode yang dipergunakan untuk menganalisis dan mengevaluasi daftar menu pada sebuah restoran, termasuk kedai kopi. Maxx Coffee merupakan salah satu kedai kopi asli Indonesia dan menjadi lokasi penelitian (Maxx Coffee FKU). Hampir setiap kedai kopi tak terkecuali Maxx Coffee FKU menetapkan target penjualan makanan dan minuman setiap bulannya. Adanya pencapaian penjualan makanan yang fluktuatif bahkan tidak mencapai target penjualan makanan, tinjauan rekayasa menu makanan dapat dilakukan untuk mengevaluasi dan menganalisis daftar menu suatu restoran. Penelitian ini dilakukan dengan menggunakan metode analisis deskriptif dan metode kualitatif untuk melihat pengaruh tinjauan rekayasa menu makanan terhadap pendapatan kedai kopi di Maxx Coffee FKU.
