Abstract

Tahu merupakan makanan tradisional khas Indonesia yang populer di kalangan masyarakat. Banyak usaha mikro, kecil, dan menengah (UMKM), termasuk Pabrik Tahu Haji Marsa, memproduksi tahu menggunakan metode tradisional. Salah satu produknya, tahu Serpong, dipres dengan teknik manual menggunakan pemberat berupa 3 batu yang beralaskan papan kayu berukuran 69 x 19 cm. Karena ukuran alas papan yang terbatas, proses pengepresan tahu serpong hanya mampu mencakup 33 tahu per sesi dengan waktu pengepresan sekitar 2-3 menit. Selain itu, pekerja harus mengangkat pemberat secara berulang kali di setiap sesi. Untuk mengatasi masalah ini, metode Design Thinking diterapkan melalui langkah-langkah Empathize, Define, Ideate, Prototype, dan Test, untuk merancang alat pres tahu Serpong yang efisien, serta penerapan metode Quality Function Deployment (QFD) agar prototype alat pres tahu Serpong sesuai dengan kebutuhan pekerja. Penerapan metode yang tepat menjadi langkah penting untuk mengatasi keterbatasan pada proses pengepresan tahu Serpong, terutama dalam meningkatkan kapasitas dan efisiensi produksi di Pabrik Tahu Haji Marsa. Hasil penelitian menunjukkan bahwa prototype alat pres tahu Serpong mampu meningkatkan efisiensi pengepresan hingga 58,3%. Waktu pengepresan untuk asumsi 1.000 tahu per hari berkurang, dari 1 jam 21 menit menjadi 33 menit 40 detik. Kapasitas pengepresan juga meningkat dari 33 menjadi 70 tahu per sesi dengan penerapan sistem tuas manual. Meskipun perhitungan waktu terbuang (waste time) tidak diperhitungkan, penelitian ini mampu menunjukkan bahwa prototype alat pres tahu Serpong dapat menjadi solusi yang tepat untuk meningkatkan efisiensi proses pengepresan tahu Serpong di Pabrik Tahu Haji Marsa. / Tofu is a traditional Indonesian food that is popular among the people. Many micro, small and medium enterprises (MSMEs), including the Haji Marsa Tofu Factory, produce tofu using traditional methods. One of the products, Serpong tofu, is pressed using a manual technique using weights in the form of 3 stones on a wooden board measuring 69 x 19 cm. Due to the limited size of the board, the Serpong tofu pressing process can only cover 33 tofu per session with a pressing time of around 2-3 minutes. In addition, workers must lift weights repeatedly in each session. To overcome this problem, the Design Thinking method is applied through the steps Empathize, Define, Ideate, Prototype, and Test, to design an efficient Serpong tofu pressing tool, as well as applying the Quality Function Deployment (QFD) method so that the Serpong tofu pressing tool prototype is in accordance with worker needs. Applying the right method is an important step to overcome limitations in the Serpong tofu pressing process, especially in increasing production capacity and efficiency at the Haji Marsa Tofu Factory. The research results showed that the Serpong tofu press prototype was able to increase pressing efficiency by up to 58,3%. Pressing time for an assumed 1,000 tofu per day is reduced, from 1 hour 21 minutes to 33 minutes 40 seconds. Pressing capacity is also increased from 33 to 70 tofu per session with the implementation of the manual lever system. Even though the calculation of wasted time was not taken into account, this research was able to show that the Serpong tofu pressing tool prototype could be the right solution to increase the efficiency of the Serpong tofu pressing process at the Haji Marsa Tofu Factory.
