Abstract
Musa sp. mainly grown in the tropical and subtropical countries. Previous study had been reported that Musa sp. leaves had a potential antioxidant activity but it was still rarely studied further. In this study, leaves of Musa acuminata, Musa balbisiana and Musa x paradisiaca was extracted using maceration method with three kinds of solvent which is have different polarity (ethanol (polar), ethyl acetate (semi polar) and hexane (non polar)) for 24 hours. The purpose of this study were to compare and determine the best treatment of different Musa sp. leaves extracts. The effect of pH and temperature on the stability of antioxidant activity was determined from the Musa sp. Leave extract who showed the highest antioxidant activity. Sample that has highest antioxidant activity was given pH treatment (3,5,7,9) and temperature treatment (50°C,70°C,90°C). The result showed that Musa balbisiana extract using hexane showed highest antioxidant activity among other Musa sp. extract within IC5o value 340.07±22.54 ppm.
