Abstract

Pada tahun 2018, pertumbuhan penduduk negara Indonesia meningkat sebesar 3,1 juta jiwa pada triwulan IV 2018 dengan total populasi sekitar 265 juta penduduk. Ini didominasi oleh penduduk dengan tingkat kelas menengah dan kelas atas sehingga kepadatan penduduk mendorong pertumbuhan pada sektor industri makanan dan minuman yang salah satunya disebabkan meningkatnya pendapatan masyarakat serta pertumbuhan masyarakat kelas menengah ke atas dan kelas atas. Di restoran fine dining seperti Restoran De Soematra 1910 di Surabaya, segmen sasaran adalah pelanggan kelas atas atau kelas menengah ke atas, pelanggan membayar tidak hanya untuk layanan tersebut tetapi juga untuk prestige, kemewahan dan status yang terkait dengan diri pelanggan. Metode penelitian yang digunakan adalah metode kuantitatif dengan pengolahan data menggunakan AMOS. Pengumpulan data dilakukan dengan penyebaran kuesioner kepada 250 responden dengan karakteristik responden pria dan wanita berumur 18-60 tahun, pelanggan yang telah mengunjungi dan melakukan fine dining setidaknya 2 kali dalam 6 bulan terakhir dan pendapatan per bulan antara Rp. 1.000.000,. - Rp. 20.000.000,. pada restoran De Soematra 1910 di Surabaya. Hasil penelitian menunjukkan bahwa Aesthetics berpengaruh signifikan terhadap Hedonic dengan koefisien regresi sebesar 0.295, Ambience berpengaruh positif tetapi tidak signifikan terhadap Hedonic dengan koefisien regresi sebesar 0.064, Lighting berpengaruh signifikan terhadap Hedonic dengan koefisien regresi sebesar 0.184, Table Settings berpengaruh signifikan terhadap Hedonic dengan koefisien regresi sebesar 0.301, Layout berpengaruh positif tetapi tidak signifikan terhadap Hedonic dengan koefisien regresi sebesar 0.090, Staff berpengaruh signifikan terhadap Hedonic dengan koefisien regresi sebesar 0.304, Music berpengaruh signifikan terhadap Hedonic dengan koefisien regresi sebesar 0.175, Aesthetics berpengaruh positif tetapi tidak signifikan terhadap Utilitarian dengan koefisien regresi sebesar 0.064, Ambience berpengaruh signifikan terhadap Utilitarian dengan koefisien regresi sebesar 0.227, Lighting berpengaruh positif tetapi tidak signifikan terhadap Utilitarian dengan koefisien regresi sebesar 0.057 Table Settings berpengaruh positif tetapi tidak signifikan terhadap Utilitarian dengan koefisien regresi sebesar 0.035, Layout berpengaruh positif tetapi tidak signifikan terhadap Utilitarian dengan koefisien regresi sebesar 0.104, Staff berpengaruh positif tetapi tidak signifikan terhadap Utilitarian dengan koefisien regresi sebesar 0.082, Music berpengaruh positif tetapi tidak signifikan terhadap Utilitarian dengan koefisien regresi sebesar 0.066, Hedonic berpengaruh signifikan terhadap Customer Sastisfaction dengan koefisien regresi sebesar 0.347, Utilitarian berpengaruh signifikan terhadap Customer Sastisfaction dengan koefisien regresi sebesar 0.486, Hedonic berpengaruh positif tetapi tidak signifikan terhadap Customer Loyalty dengan koefisien regresi sebesar 0.034, Utilitarian berpengaruh positif tetapi tidak signifikan terhadap Customer Loyalty dengan koefisien regresi sebesar 0.118 dan Customer Satisfaction berpengaruh signifikan terhadap Customer Loyalty dengan koefisien regresi sebesar 0.706 / In 2018, Indonesia's population growth increased by 3.1 million in the fourth quarter of 2018 with a total population of about 265 million inhabitants. This is dominated by middle and upper class population so that population density drives growth in the food and beverage industry sector, one of which is due to increased income of the community and the growth of middle and upper classes. In fine dining restaurants such as De Soematra 1910 Restaurant in Surabaya, the target segment is upper class or upper - middle class customers, they also pay not only for these services but also for prestige, luxury and status related to the customer's self. The research method used is a quantitative method with data processing using AMOS. Data collection was carried out by distributing questionnaires to 250 respondents with the characteristics of male and female respondents in the age range 18-60 years, customers who have visited and had done fine dining at least 2 times in the last 6 months and monthly income between IDR 1,000,000,.- IDR 20,000,000,. at the De Soematra 1910 in Surabaya. The results showed that Aesthetics had a significant effect on Hedonic with a regression coefficient of 0.295, Ambience had a positive but not significant effect on Hedonic with a regression coefficient of 0.064, Lighting had a significant effect on Hedonic with a regression coefficient of 0.184, Table Settings had a significant effect on Hedonic with a regression coefficient of 0.301, Layout has a positive but not significant effect on Hedonic with a regression coefficient of 0.090, Staff has a significant effect on Hedonic with a regression coefficient of 0.304, Music has a significant effect on Hedonic with a regression coefficient of 0.175, Aesthetics has a positive but not significant effect on Utilitarians with a regression coefficient of 0.064, Ambience has a significant effect on Utilitarians with a regression coefficient of 0.227, Lighting has a positive but not significant effect on Utilitarians with coefficients regression of 0.057 Table Settings has a positive but not significant effect on Utilitarians with a regression coefficient of 0.035, Layout has a positive but not significant effect on Utilitarians with a regression coefficient of 0.104, Staff has a positive but not significant effect on Utilitarians with a regression coefficient of 0.082, Music has a positive effect but Not significant to Utilitarian with a regression coefficient of 0.066, Hedonic has a significant effect on Customer Sastisfaction with a regression coefficient of 0.347, Utilitarian has a significant effect on Customer Sastisfaction with a regression coefficient of 0.486, Hedonic has a positive but not significant effect on Customer Loyalty with a regression coefficient of 0.034, Utilitarian positive but not significant effect on Customer Loyalty with a regression coefficient of 0.118 and Customer Satisfaction significantly influence Customer Loyalty with a regression coefficient of 0.706
