Abstract

Leucaena (Leucaena leacechopala [Lam.] De Wit) contains nutrients such as carbohydrates, proteins, essential amino acids, antioxidants, minerals and vitamins, and mimosine. The purpose of this research is the utilization of leucana seeds in kefir making. The combination of ratio brown sugar (3,45, 5,09, 6,67, 8,20%) and skim milk (3,45, 5,09, 6,67, 8,20%) and then fermented using kefir starter to produce kefir. Kefir starter is made by fermenting 5% kefir grains in skim milk for 24 hours. The results showed that the most suitable to leucaena seeds juice kefir is concentration of 8,20% brown sugar and 6,67% skim milk. Leucaena seeds juice kefir contain antioxidant 17988,75 mg / L, phenolic 374,68 mg GAE / L, total flavonoid 55,56 mg QE / g, total energy 36,48 kcal / 100 g, energy from fat 2,52 kcal / 100 g, water content 90.93%, 0.30% ash content, 0.28% fat, 0.44% protein, 8.05% carbohydrate, and 2.39% dietary fiber. The highest GC-MS results were acetic acid, acetaldehyde, lactic acid, and 5- hydroxymethylfurfural. Based on the results of scoring and henodic test, leucaena seeds juice kefir is still unacceptable by the panelists.
